SEAFOOD SMOKER AND PRODUCT MANAGER

Pacific Plaza Imports Inc and their various divisions farms, processes, repacks and sells a variety of seafood products ranging from sturgeon caviar, sturgeon meat, smoked salmon and a variety of other seafood value added products. The main facilities are a sturgeon farm located in Wilton, CA with an onsite processing plant.

This is a new position, consolidating oversight of these tasks done by a variety of people into one position.

The priorities are as follows:

1. You will also be involved in the development of new products, scaling those new products and ensuring their consistency of production. A background including a culinary background is highly desirable. Existing products you will be in charge of includes a smoking program that you should be able to demonstrate your background in both hot and cold smoked seafood products, and have experience in the successful developed of value added products

2. Be responsible and ensure all paperwork having to do with HACCP, Seafood Safety and QC compliance. Additional third-party inspections take place, requiring strict compliance with their standards. This includes parties such as Whole Foods Markets, Costco and potentially others for which you will be the main contact person to prepare for and lead these audits.

3. Development of and improvement of all worker safety programs to ensure compliance with all regulatory agencies with respect to worker safety. This includes coordination with the Farm Production people to ensure a uniform system of worker safety is developed and adhered to.

4. You will lead the day to day activities, staffing requirements etc. of the processing plant to improve productivity while keeping quality control and food safety as a priority. You will be coordinating with the Production Lead on the farming to meet those needs as well as coordinating with the sales.

RESPONSIBILITIES as MANAGER:

Have primary responsibility to smoke seafood products and ensure all other products are manufactured on time and to specifications.

Become the manager by being the team leader of the processing department and lead all aspects of personnel assignments and staffing level

Ensures Quality Assurance through ensuring continuous inspection, testing and documentation of all tasks related to the processing of fresh and frozen seafood is done.

Conducts food safety assessments and ensures compliance with 3rd party audits. A main focus will be on the documentation and audit process by third party audit companies.

Be and stay current with all State, Federal, and local regulatory agencies to ensure compliance.

Coordinates with head office sales staff to ensure the appropriate products as available to meet the sales department’s needs.

Performs other relevant job duties as required and not necessarily listed here.

JOB REQUIREMENTS:

Education/Certification:

A minimum of an Associate Degree in Biology, Food Science, Public Health, Environmental Science or related field required, BA preferred with previous work experience in this area required.

HACCP certifications required or be able to obtain one.
