Kitchen Manager, Sous Chef

Position is located at the Siren Song Vineyard Estate and Winery in Chelan, WA.

RESPONSIBILITIES & DUTIES - GENERAL

 Manage daily kitchen operations from opening to closing

 Follow operating procedures and checklists for opening and closing and oversee that checklist items are completed in a quality way for every shift.

 Check, secure, label, and date food and ingredients to ensure freshness and minimize waste

 Supervise and coordinate line cooks and other food preparation workers

 Work with Executive Chef to plan and execute menus for special events

 Ensure all recipes and plating techniques are documented, trained, prepared and plated consistently

 Track and manage food costs

 Monitor, manage, and document prep quantities and food waste

 Execute weekly inventory

 Inspect supplies, equipment, and work areas for cleanliness and functionality

 Participate in the hiring, training, and supervision of cooks and other food preparation workers

 Monitor sanitation practices and ensure that kitchen safety standards are followed

 Maintain the highest level of hygiene, health standards, and uniform code

 Expedite food to customers, bus, and wash dishes as needed

 Work with Manager to support daily operational flow as well as providing input to weekly staff scheduling.

 Attend staff meetings/trainings

 You are expected to be super polite and super friendly in all guest interactions.

 You are expected to arrive on time and be prepared to work.

 You are expected to be well-groomed, wear a clean (to be provided), and comfortable, clean/polished shoes.

 You are expected to follow all operational procedures and house rules to ensure customer and employee safety, and comfort

 You are expected to set an example of our best practices every day

 As a leader, you are expected to work closely with other leadership and management staff to effectively identify, trouble shoot, and solve problems as well as identify areas for improvement as needed.

REQUIREMENTS

 You must have at least 2-3 years commercial kitchen/restaurant/food service experience

 Requires a social security card, and a valid driver’s license.

 Be physically capable of standing and assisting customers for several hours each day.

 Be physically capable of lifting and carrying 40 pounds.

 Be physically capable of carrying trays with wine stems and plates.

 Be able to multi-task in a fast-paced work environment.
