Lead Cook (AM & PM)
The Lead Cook is responsible for overseeing all kitchen operations during their shift, ensuring high-quality food preparation, enforcing kitchen standards, and maintaining efficiency during service hours. They are also responsible for supervising line cooks, maintaining inventory, and ensuring all cleaning protocols are followed.
Key Responsibilities:
Kitchen & Cooking Duties:
Prepare and cook all menu items according to standardized recipes, focusing on consistency and presentation.
Maintain food quality and portion control standards.
Supervise and direct kitchen staff during shifts, ensuring smooth workflow.
Expedite food orders and ensure timely service.
Assist in the training of new kitchen staff.
Monitor and restock ingredients as needed throughout the shift.
Ensure proper handling and storage of food items to maintain freshness.
Enforce food safety and sanitation guidelines at all times.
Cleaning & Maintenance Duties:
Conduct opening and closing kitchen procedures, including setting up and breaking down stations.
Ensure deep cleaning tasks are completed at the end of each shift, including grill, fryers, and prep areas.
Monitor and enforce proper use and maintenance of kitchen equipment.
Assist with inventory tracking and notify management of low-stock items.

Key Responsibilities:
Cooking & Food Prep Duties:
Cook burgers, fries, and other menu items according to established recipes.
Set up and maintain a clean and organized workstation.
Prep ingredients such as chopping vegetables, portioning meats, and preparing sauces.
Monitor grill, fryer, and other cooking equipment to ensure proper function.
Assemble and plate food items with attention to detail and presentation.
Communicate with other team members to ensure orders are completed correctly.
Assist with restocking and rotating ingredients to maintain freshness.
Cleaning & Maintenance Duties:
Clean and sanitize workstations throughout the shift.
Perform daily and weekly deep cleaning tasks, including scrubbing grills, fryer oil changes, and wiping down prep areas.
Maintain cleanliness of coolers, freezers, and dry storage areas.
Properly store food items following FIFO (First In, First Out) procedures.
Assist with dishwashing and cleaning kitchen utensils as needed.

Daily Cleaning Tasks:
Clean and sanitize prep stations, cutting boards, and utensils.
Wipe down countertops, shelves, and storage areas.
Sweep and mop kitchen floors.
Scrub grill, clean fryers, and empty grease traps.
Take out trash and change liners.
Wash and sanitize kitchen equipment, including slicers and mixers.
Maintain the cleanliness of walk-in coolers and freezers.
Weekly Cleaning Tasks:
Deep clean grills, ovens, and fryers.
Wash hood vents and filters.
Organize and deep clean dry storage and refrigeration units.
Scrub walls, doors, and baseboards in the kitchen area.
Sanitize drains and floor mats.
