Job Description:
We produce ice cream and ice cream products; we are a scratch kitchen and make everything from scratch.
Job description activities include but are not limited to the following:
Following recipes for baking
Processing fresh fruit and ingredients
Running ice cream machine to make ice cream
Cutting ice cream sandwiches
Wrapping and packaging products for sale.
Cleaning and prep tasks
Working in a FAST-PACED environment
Working with commercial kitchen equipment and machinery
Measuring and weighing ingredients
Preparation and packaging of ice cream products
Receiving deliveries
Efficient and accurate cleaning of equipment, facilities, and wares
The following items are required for the position:
Punctuality - it is necessary that you be present and ready to begin work at or before the scheduled time every day. This is particularly important as other employees will rely on your assistance.
Respect - treat co-workers kindly.
Cleanliness - because we are working with/serving food it is critical to maintain good hygiene with clean clothes, and a work uniform when appropriate.
Customer Service - regardless of each of our job titles, we can’t sell any ice cream if there isn’t anyone to eat it. Please think of every interaction as an opportunity to promote Weckerly’s in the best light possible.
Record Keeping
We keep logs for a handful of processes and inspection procedures. Both these exist to track production costs, as well as to ensure the equipment is working properly and food is stored at safe temperatures. The Production Manager may ask you to fill these out from time to time.
Cleaning and Sanitation
Keeping a clean processing area, including shelves, tables, equipment, sinks, containers, and wares, is necessary for producing a safe, high-quality product. Before signing off on this job description, please take some time to review the handbook that includes our Standard Operating Procedures. There are also daily and weekly cleaning tasks posted in the kitchen and by the pantry.
Personal cleanliness is also important. Shoes for kitchen use should not be worn outside. If they are, either wash and sanitize the soles or use shoe covers. Hair should be covered by a hat, bandana, or hair net. Clean work shirts and aprons are provided (everyone takes turns washing them). Hands must be washed every time upon entering the kitchen, eating, or other instances of potential contamination. Gloves should be worn when handling food.
Facilities and Equipment
Cleaning Schedule
Check tasks on daily, weekly, and monthly cleaning schedules. Try to complete at least one outside of the kitchen by the end of every shift.
Record Keeping
Assist kitchen manager in making daily checks of all refrigeration temperatures. Keep a weekly log of temperatures for each piece of equipment.
Inventory & Ordering
Inventory Rotation and Organization
Both freezers and refrigerators should maintain FIFO organization. Make regular checks of expiration dates, and identify products that need to move quickly (perishable and frozen). Face and organize pantries and walk-ins as needed.
Weekly Inventory
Monday morning inventory of packaging supplies, dry ingredients, perishable ingredients, and frozen products. Second product inventory on Thursday to update. The Production Manager will delegate.
Additional Requirements
Basic understanding of sanitary practices for food handling.
Ability to lift 50 lbs. and work on feet for long periods.
Year-round availability
Comfort with physical work and repetitive tasks.
Ability to work and keep up in a fast-paced environment
Punctual – You have to come in on time and be dependable
Previous commercial kitchen/catering/restaurant experience is REQUIRED.
This is a physical job in a limited space with other people. Desired characteristics of applicant are:
