Role Description
This is a full-time on-site role for a sushi cook position at Velvet Belly in Rochester, New York. The role will involve day-to-day culinary tasks and responsibilities related to food preparation, cooking, and menu creation.
Sushi Cooks are responsible for the following:
- Ensure ingredients and final products are fresh
- Follow recipes, including measuring, weighing and mixing ingredients
- Prepare sushi rice
- Break down whole fish
- Present, garnish and arrange final dishes
- Maintain a clean and safe work area, including handling utensils, equipment and dishes
- Handle and store ingredients and food
- Maintain food safety and sanitation standards
- Clean and sanitize work areas, equipment and utensils
- Execute opening and closing procedures
- Set up workstations with required ingredients and equipment
- Monitor station inventory levels
- Accommodate guests’ special requests
- Ability to operate kitchen equipment such as broilers, ovens, grills and fryers
Qualifications
- Experience in a professional kitchen environment
- Knowledge of food safety and sanitation regulations
- Ability to work in a fast-paced, high volume kitchen setting
- Strong teamwork and communication skills
- Experience with sushi preparation required
- Culinary degree preferred
