The Kitchen Steward at Roxy Hotel works hand in hand with coworkers and chefs to develop a deep understanding of the flow of the kitchen as well as service. To be a successful Kitchen Steward you must be detail orientated, an ability to work on ones own to ensure the upkeep of a clean and organized work area. A Kitchen Steward is an essential part of the kitchen team and must have a full understanding of the importance of the roll as well as conduct themselves with professionalism and integrity.
ROLE RESPONSIBILITIES
o Ensure the kitchen is clean, well maintained and organized at all times
o Ensure floors are dry and clean at all times
o Operate pot-washing machinery and maintain a hygienic working environment in accordance with department of health standards and company standards
o Adhere to all sanitation guidelines
o Assist the Cooks and Servers as and when necessary
o Collects and removes trash from all areas of the operation following established procedures
o Dispose of waste as per the hotel and authority standards and adhere to recycling guidelines
o Ensure waste bin area is kept clean and tidy
o Carry out general cleaning as directed to include sweeping, mopping up, washing up, emptying of rubbish bins and boxes ensuring placement in the correct containers
o Cleans and sanitizes pots, pans, utensils, and other minor equipment routinely used in the kitchen following established procedures
o Cleans and maintains floors and walls in kitchen and dish washing area by following standard procedures
o Cleans and sanitizes dishes and related service ware following established procedures
o Cleans large equipment as assigned, following established procedures
o Consistently adheres to SDS (Safety Data Sheet) information related to the proper and safe use of chemicals in the workplace
o Knowledge and proficiency to operate industrial dish washers
o Ensure all equipment is clean and in good working order
o Check all chemical levels and inventory
o Wash, wipe, sort, stack, and load/unload all items into the dishwasher
o Wash, wipe, sort, stack and store all cleaned items in an organized and safe manner
o If any breakages or chipped items found then remove them from circulation and update the breakage and inventory register
o Clean, sanitize and close workstations
o Uses and maintains all equipment's according to manufacturer and department guidelines
o Report any maintenance or hazard issues to the chief steward / stewarding manager
o Assist in light food preparation as directed by manager or chef on duty
o Assist in serving food and beverages to the residents in the dining room
o The Kitchen Steward, upon demonstrated job performance excellence, will be considered for numerous growth opportunities
o Always maintain a clean and safe work environment
o Other duties as assigned
QUALIFICATIONS
o The right candidate should have a positive attitude, communicates effectively, work under pressure and priorities and works efficiently with limited supervision
o Related experience in a back of house hospitality industry position is a plus
o Must have a qualifying certificate in food protection issued by New York City department of health and mental hygiene
o Written and verbal English communication skills (Spanish a plus but not required)
