The Penrose is looking for a strong and talented Chef de Cuisine to lead our kitchen!
THE ROLE:
The CDC will lead the kitchen team at The Penrose, overseeing all daily culinary operations. This leader will work directly with our Executive Chef Nick Testa (winner of Chopped) and the onsite management team to uphold our quality and standards.
WHO YOU ARE:
3+ years of experience in a high-volume kitchen
Ability to work efficiently and calmly in a fast-paced environment
An approachable leader who can motivate, manage, and develop a large and diverse team
Excellent communication skills
Self-starter who is results-oriented and who appreciates and takes initiative on both the essential details and the bigger picture
Experience with managing employees, including hiring, training, and scheduling
Superb time management skills with the ability to prioritize and organize work assignments
Bilingual (Spanish speaking) is a plus
WHAT YOU'LL DO:
Oversee the day-to-day kitchen operations, including but not limited to, staff oversight, quality control, and cost control
Develop a personal relationship with kitchen staff, work to keep morale high
Maintain systems for portion control and recipe adherence
Maintain and manage daily line checks
Manage all ordering
Maintain proper receiving procedures and inventory management
Maintain a clean and organized kitchen, adhering to food safety standards and all DOH regulations
Ensure all food is of the highest quality
