Working closely with the Partners the Managing Partner, The General Manager will ensure that we adhere to Motel No Tell’s (the company) operating paradigms in hospitality, quality, service, atmosphere, and consistency. In addition, make sure the store employees follow the appropriate policies and procedures. The GM’s responsibilities are too diverse and general to classify in any one functional area of management or administration, such as purchasing or administrative services. Consequently, the GM’s duties and responsibilities will vary depending on the company’s needs and will develop over time. As a result, the GM’s schedule and the hours will vary from week to week.
Activities, Duties & Responsibilities: Store Management
Promote, work, and act in a manner consistent with the mission, core values, and culture of Motel No Tell.
Interact with guests and co-workers in a manner outlined in the company manuals, policies, and procedures
Fill the store managers’ schedule gaps due to vacation, illness, general absences, and terminations.
Conduct random off schedule visits to confirm the Motel No Tell standards, policies, and procedures are being
followed.
Perform periodic facilities inspections to ensure compliance with company standards and policies, as well as
NYC’s Department of Health (DOH) regulations, New York City Fire Department (NYFD) requirements, and the Department of Buildings (DOB) standards.
Supervise compliance with DOH regulations regarding food preparation and sanitation, the rules of the NYFD, and the DOB policies.
Must have an NYC Department of Health Food Handlers Certificate and be TIPS certified.
Assist in preparing policies and standard operating procedures.
Implement production, productivity, quality, and guest service standards.
Assist and advise in the following areas:
○ Ensure that the store has appropriately staffed all positions (FOH & BOH) for anticipated business
activity.
○ Upgrade the FOH staff’s knowledge, skills, and professionalism.
○ Maintaining the restaurant’s professional image, cleanliness, uniforms, general appearance, and
operating standards.
○ Confirm that the company’s policies and procedures are followed.
○ Assure that all federal, state and local regulations pertaining to the restaurant, its employees, guests’
health safety, and labor requirements are met and maintained.
○ Ensure that we immediately address complaints regarding food quality, service, or accommodations.
Make sure the complaint was investigated and satisfactorily resolved
○ Assist the Partners with arranging for equipment and facilities maintenance and repairs
○ Review work procedures and operations, work with the Director of Operations to determine ways to
improve service, performance, and safety
Activities, Duties & Responsibilities: Beverage Management
Perform weekly inventories
Maintain an appropriate level of stock based on sales projections
Identify dead merchandise and develop a plan to sell the product
Manage the processing of invoices and ensure timely payment of invoices.
Place orders with the liquor, beer, and wine vendors when necessary and appropriate.
Consistently achieve a COGS of 16.5% of sales or less.
Assist in negotiating supply costs and contracts, developing preferred supplier/vendor lists, reviewing and
evaluating usage reports, analyzing variances, and taking corrective action as necessary.
Arrange for periodic review of existing beverage products with vendors, looking for better quality products at the same price point or similar quality at a lower price point.
Assist in periodically evaluating the sales of our beverages and determining if changes are warranted.
Work with the Partners in making periodic changes to the beverage menu.
Ensure that Motel No Tell bartenders produce cocktails following our approved recipes, and all cocktails are in the appropriate and pre approved glassware.
Verify that the amount of liquor in a drink, cocktail, or glass of wine is the prescribed amount.
Activities, Duties & Responsibilities: Other
Working with the Managing Partner and the Partners, ensure continuity and consistency between our POS System, Website, Delivery/Takeaway Platforms, and appropriate Social Media platforms.
If necessary, and asked of the GM, evaluate the vendors and pricing on our non-perishable supplies to determine if the better quality or lower price products are available
Assist in planning, organizing, and executing on-premises and off-premises marketing events.
