Wine and Beverage Director

At The Emeril Group we are seeking a Wine and Beverage Director to oversee the wine and beverage programs for our New Orleans based restaurants including Emeril’s New Orleans (Wine Spectator’s Grand Award since 1999), Meril and future restaurants as they are opened. The wine and beverage director will work closely with the sommeliers, managers and bartenders at the restaurants with duties that include updating and maintaining the wine lists, designing and implementing wine promotions, training and education of service/bar staff and cost controls of wine inventory. They will be adept at answering guest questions or concerns regarding the origin, vintage, and style of various wines. The wine and beverage director must constantly research and stay abreast of all aspects and current trends of the industry.

The wine and beverage director will also work in conjunction with the managers and lead bartenders to help oversee wine/beverage sales, promotions, inventory and controls. Additionally, our wine and beverage director is intimately involved in table service and may have managerial responsibilities during shifts and must follow all state and local laws for serving alcohol responsibly. 2-3 years managerial experience in fine dining is required. Wine certification such as CMS or WSET is highly desirable. Candidates must have enthusiastic sense of hospitality with professional, friendly demeanor. Devotion to customer service and positive employee relations abilities are a must.

Responsibilities:

Update and maintenance of wine lists, pairings, educational materials.

Coordinate, collaborate and provide ample and continuous beverage training, tasting and education to ensure staff wine, beer, and beverage knowledge is the best in our industry.

Actively participate in the cycle of service in order to promote, educate and sell wine to guests.

Select wines, beers, cocktails and non-alcoholic beverages used in the restaurant for pairings, by the glass, and those represented as bottle selections on the restaurant’s wine list.

Maintain wine inventories, pricing and cost controls.

Assist the management in providing educational outlets, mentorship, and supplies for the FOH staff to enrich and strengthen their skills and knowledge in the company’s wine and beverage selections as well as the company’s beverage philosophy.

Maintain cellars and wine rack organization and cleanliness.

Actively track and reduce loss through proper pour levels, minimizing waste and loss.

Dating bottles when opened to ensure optimal window of drinking.

Recommending food and wine pairings for our guests based on their personal preferences and our cuisine.

Continuously taste, research and remain active & relevant in the industry.

Get to know the regulars and their preferences

Be present for the FOH staff, maintain a sense of awareness on the floor at all times, and be prepared to lead by example.

Key Requirements:

Minimum of 2-3 years’ experience in fine dining management, with at least 2 years’ experience as a sommelier.

Leadership and communication skills.

Time management and organizational skills.

Good understanding of the restaurant business and budgets.

Desire and ability to teach and foster growth.

A genuine passion for, and knowledge of, food, wine and customer service.

Ability to diplomatically deal with difficult situations and people, while exhibiting a consistent level of professionalism.

Handle stress associated with responding to and solving problems.

Present a neat professional appearance and demeanor at all times.

Excellent verbal & written communication.

Keen attention to detail.

Accurately complete paperwork and reports.

Maintains on-going communication with managers and staff.

Conduct on-going staff meetings to provide continuous training and development.

Ensure compliance with all employment policies.

Ensure excellent maintenance and cleanliness of the dining room at all times

Promote food safety standards and maintain ServSafe or comparable certification.

Must be available to work days, nights, weekends, and holidays.

Demonstrated ability to lead people and get results through others.
