Overview : DiOrio's Pizza & Pub is seeking a qualified & experienced individual to control kitchen operations at our newest location in Prospect KY. The role primarily entails managing food quality, maintaining standards of cleanliness & efficiency, and taking responsibility of the current & future kitchen staff and their performance.
Responsibilities :
1. Staff Management :
- Hire, train, & supervise kitchen staff
- Create kitchen staff schedule and ensure proper coverage
- Monitor staff performance and provide feedback to owners
- Handle disciplinary actions when necessary, including potentially firing of employees
- Foster a productive and positive team environment
2. Kitchen Operations
- Oversee daily kitchen activities & workflow
- Ensure that food is prepared consistently, accurately, and meets quality standards
- Coordinate communication between kitchen & front of house
- Monitor prep levels, adjusting for business volume
- Manage ticket timing during service, ensuring that food goes out in a timely manner, and in proper order
- Ensure that fry oil is changed Mondays & Fridays of each week
- Delegate effectively to ensure that all necessary tasks are complete each day
3. Inventory & Ordering
- Conduct regularly inventory counts
- Order food, supplies, and anything else that the restaurant needs
- Track & minimize waste & spoilage
- Ensure deliveries are checked for quality & accuracy
- Maintain proper stock levels without over-ordering
4. Food safety & sanitation
- Enforce health & safety regulations
- Ensure kitchen cleanliness & organization
- Maintain proper food handling, storage, and labeling procedures
- Schedule & oversee deep cleaning tasks with staff once per month
5. Cost control
- Monitor food & labor costs
- Work with owners to meet budget goals
- Reduce waste and improve efficiency
- Implement portion control measures
- Keep records of invoices from distributors to track costs over time
6. Equipment maintenance
- Ensure all kitchen equipment is working properly and clean
- Work with owners to schedule regular maintenance & repairs
- Keep records of services completed
7. Compliance & reporting
- Ensure compliance with local, state, & federal food safety regulations
- Maintain necessary logs (temp logs, cleaning checklists, etc.)
8. Emergency handling
- Respond to equipment malfunctions or shortages with urgency
- Handle staff call-outs and last-minute schedule changes
And of course, anything else the owners need to add to this list.
Pay between $17 and $20 starting out, with a pay of $21 per hour once fully trained
