The Commissary Prep Manager works directly under our Director of Culinary Support who handles overall operations for the back of house and kitchen area of a restaurant. The Commissary Prep Manager will assist with, purchasing and stocking food, and making sure everyone is trained on proper food preparation and kitchen safety techniques. In addition, they will ensure that the company's standards are upheld: the food looks good and is cooked properly, the proportions are correct, and is cooked in a timely manner. Line Cook Lead will also make sure that the kitchen is properly cleaned on a regular schedule, food is disposed of properly and the kitchen meets all sanitary standards.

Commissary Prep Managers also hit the books, by keeping tabs on food cost, waste and employee hours, and some administrative duties including taking orders and inventory.

Responsibilities:

Assisting, correcting and guiding prep cooks. Overseeing and managing prep staff to minimize waste and maximize efficiency

Maintain or create new systems as needed in response to commissary needs

Help prep staff in their professional development

Working with vendors in order to effectively manage food inventories and ingredients to ensure proper ordering

Perform daily prep

Provide suggestions and work with culinary curator to improve food production

Provide feedback for the Driector of Culinary Support regarding food quality issues

Complete daily and weekly cleaning tasks

Restock and reset after each shift, adhering to FIFO procedures

Assist in other departments if necessary

Skills/Abilities:

Move at a rapid pace for a prolonged period of time

Ability to lift at least 50 lbs

Great knife skills

Good communication skills

Good time management skills

Good prioritization and planning skills

Belief in the greater good

Requirements-

Open availability

Experience in leadership, preferably in a kitchen setting

Experience in a restaurant or as a prep cook
