Union Square restaurant, Tratto, located in the Marker Hotel off Geary Street, is seeking an experienced Sous Chef. A spirited, bar-driven restaurant serving rustic Italian fare with modern sensibilities, Tratto means the stroke of a pen in Italian, a nod to the neighborhood’s artistic history. A flavorful menu of simple, delicious and shareable dishes coupled with casual, communal-style dining creates a neighborhood bar experience inspired by the Italian happy hour tradition of "aperitivo." Dishes such as house-made pastas and sausages, pizza, seasonal vegetables and seafood are prepared with as little manipulation as possible, ranging from slow-cooked braises to "à la minute" cuisine. Our full bar features traditional Italian cocktails with a twist, house-made Italian Sodas and limoncellos, and beer and wine sourced from the best of the West Coast and Italy.

The Sous Chef role is a full time salary job. We are open for Breakfast 7 days a week, and Dinner 5 days a week (Tuesdays-Saturdays). One of the main functions of this role is to be the primary Chef for banquets that we do within our space as well as on a larger scale throughout various hotel spaces/rooms. This individual should have experience managing a kitchen and executing large banquets, as well as the ability to work all stations and develop people.

Responsibilities include but are not limited to:

opening and closing the kitchen

maintaining the equipment and facilities

assisting in production and ordering

managing staff (training, developing, labor cost)

collaborating with Chef and FOH Managers and on-site hotel management team on menus, banquets and promotions.

upholding dish execution, product quality and consistency

MUST have Banquet Experience!
