We have a unique opportunity for a motivated Sous Chef to join our culinary team! We are searching for an enthusiastic individual who is looking to utilize our products in a way that reflects our dedication to sustainable farming while following our style of American farmhouse cooking. This individual must take pride in precision and detail. This is a hands-on position that requires working a line or prep position when needed. Results, integrity and teamwork are important for success in this position.
Responsibilities:
-Organize the daily tasks of the kitchen including menu planning, workplace standards, and product utilization
-Follow kitchen opening standard operating procedure to ensure clear communication to kitchen and front of house staff
-Uphold company standards for cleanliness and organization in the kitchen areas. Examples: maintain organized and clean walk-in cooler with all product labeled and dated, sanitizer at each station, and clean organized work stations
-Ensure all kitchen stations are prepared and ready for service
-Manage kitchen staff, providing necessary direction and training
-Provide thorough training for new staff and give coaching and feedback as needed. This includes providing recipes and oversight to all new employees
-Ensure that all food safety, food quality standards, workplace safety standards, and company policies are met. Comply with all -Department of Environmental Health food safety regulations
-Actively manage daily staffing levels to account for staffing call outs and other staffing shortages by re-prioritizing tasks and adjusting the daily schedule. Effectively communicate these changes to the rest of the kitchen managers
-Place daily orders for product efficiently to minimize waste while maintaining sufficient product to avoid running out of dishes
-Ensure all product ordered is utilized 100% through efficient preparation, storage, and usage
-Verify and check all incoming food orders to ensure product quality. Return and manage credit for any products that do not meet our quality standards
-Check all invoices to ensure accuracy of product pricing and quantity
-Assist with end of month inventory counts and submit counts in a timely manner per company policy
-Review menus each meal period to make sure they are current and with correct pricing
-Provide menu changes to front of house management by 9:30AM for lunch and 3:30PM for dinner to allow for sufficient time for printing and POS updates
-When managing the expediter station, provide direction to the line staff, coordinate replacement of mis en place, act as liaison between front of house and the kitchen line, and inspect every dish to be sure that all plates that leave the kitchen meet taste and design standards
-Attend weekly kitchen manager menus to collaborate on menu development and Long Meadow Ranch product usage
Education, Experience and Requirements:
-3+ years working in a fast-paced, fine dining establishment
-1+ years of culinary education
-Advanced knowledge of food profession principles and practices
-Must lead and work in a manner consistent with LMR's core values - Balance, Respect, and Stewardship
Ability to work well independently and as part of a team
-Ability to effectively communicate in a professional manner
-Ability to work calmly and effectively under pressure
-Be able to accept constructive criticism and direction from the chef
-Available to work weekdays, weekends and holidays with varying shifts and hours
-Must strictly follow the company Preparedness Plan and Safety protocols
-Ability to lift and move 50+ pounds
-Ability to stand and walk for long periods of time
-Must be able to bend or twist body
-Must be able to occasionally stoop, kneel, crouch or crawl
-Must be able to use both hands to handle, grasp, move and control objects, tools and equipment operations
-Must be able to repeat the same movements throughout the shift
-A pre-employment background check is required
Compensation and Benefits:
-This is a full-time, salaried position
-The Company reasonably expects to pay in the range of $75k to $85k plus bonus for this position. Of course, this is depending on several factors including, but not limited to, relevant education, qualifications, certifications, experience, skills, seniority, geographic location, performance, shift, and business or organizational needs. This wage range may be modified in the future
