San Francisco Baking Institute is seeking to add a lead baker to our team.
This role will primarily work in a bakery kitchen with a small team of bakers. Ideal candidates will have commercial bread baking experience and good communication skills. Fluency in English and Spanish is preferred.
Essential Duties and Responsibilities: Oversee production of bread, Viennoiserie and pastry for our retail bakeries.
Produce bread, Viennoiserie and pastry according to the formulas and schedule
Follow the formula and production protocol explicitly, carefully weigh and measure all ingredients as specified
Maintain product quality, troubleshoot when issue arises
Coordinate with other team members to create a daily plan and timeline
Communicate with Store Manager to find out and meet their needs
Always be on the lookout for ways to improve efficiency
Maintain a clean and organized space during production

Able to clearly communicate with other team members
Has experience and knowledge to mix, divide, shape and bake yeasted and sourdough bread and Viennoiserie
Ability to lift at least 50 pounds, multiple times a day
Ability to stand on your feet while working
Schedule: Tuesday-Saturday, 3am-11:30am or 4am-12:30pm. Must be available to work during holidays.
