The Epicurean Trader, San Francisco’s premier gourmet food, wine, and spirits market, is seeking a talented Kitchen Lead for their Commissary Kitchen at The Ferry Building.

We are looking for a reliable and motivated Kitchen Lead to join our Commissary Kitchen, which produces in-house products for our cafes, wine bars, and specialty markets.

Examples of items that are produced in-house include paninis, European-style baguette sandwiches, smoothies, pre-cut fruit, pre-packaged nuts, and other bulk items, 'to go' cheese platters, as well as components for the wine bar menu.

This position is perfect for someone with instructional experience at a Culinary Institute and/or who has led a Kitchen with moderately experienced kitchen staff. A key element of this role is developing new menu items and training the kitchen prep team on how to execute the menu items accurately and efficiently.

POSITION SUMMARY:

The role requires you to manage a kitchen prep team to ensure in-house products are produced efficiently and consistently. The role also requires that you maintain our recipe book, assist with developing seasonal menu items, and ensure that all raw ingredients are ordered accurately, and without wastage, to ensure all items can be produced each week.

The essential functions include, but are not limited to the following:

Place weekly inventory orders;

Train and develop the kitchen prep team;

Ensure all in-house menu items are produced efficiently, accurately, and consistently;

Assemble cheese and charcuterie platters and small appetizers for on-site consumption at The Ferry Building wine bar;

Produce breakfast and lunch items, including sandwiches and salads, for on-site consumption at The Ferry Building;

Develop new seasonal menu items;

Maintain the cleanliness of the kitchen and walk-in cooler and adhere to all health department protocols.

MINIMUM QUALIFICATIONS:

Must have experience leading or managing a kitchen team;

Must be fluent in Spanish and English;

Must consistently have regular, dependable attendance; and be able to satisfactorily pass a background check;

Experience in a high-volume kitchen, café, or market OR experience as an instructor at a Culinary Institute;

Open availability, including nights and weekends;

California Food Handler’s Card;

Eligible to work in the U.S. for any employer without sponsorship

Must be willing and available to work flexible work schedules, to meet the changing requirements during store hours. Weekend shifts are required for maximum exposure to customers and staff.

Must have the ability to perform all physical and mental requirements of the position, to successfully perform the essential functions of this job, including, but not limited to lifting 50+ lbs. of product regularly; working safely with cleaning chemicals and kitchen equipment; climbing stairs and walking/standing throughout the majority of the workday; occasionally stooping or kneeling; reaching with hands and arms; talk and hear.
