A little history about our Company . . .

STERLING CAVIAR is undeniably the largest producer of caviar in the U.S. We offer an environmentally friendly and sustainable way of producing caviar that has helped reduce the pressure on wild sturgeon stocks. In 1988, the Company became the first commercial sturgeon farming operation in California, and in 1993, the first farm-raised caviar in the world was processed and produced on our farm!

We originally sourced the White Sturgeon from the Sacramento River, but in 1994, the team worked with the California Department of Fish and Wildlife and the University of California - Davis to develop an environmentally responsible brood stock program and replaced all the wild fish it borrowed from the river. Today, Sterling Caviar maintains an online store that introduces customers to top-quality caviar. Its rich flavors, ethical farming, and friendly service have impressed people across the U.S. We have a lot of pride in being the pioneer of culturing sustainability of the California Shite Sturgeon. All the White Sturgeon fish we process/sell have been raised on our farm!

We own and operate five sturgeon farms located in the Sacramento area - also known as the “Farm-to-Fork Capital of America” – where American White Sturgeon are spawned and raised with meticulous care. Controlling the entire process - from breeding and spawning through harvest and production of finished product allows us to guarantee both quality with absolute traceability. From our farm to your table, we've been producing America's finest sturgeon meat and caviar, while also leading in research for sturgeon preservation for over 30 years.

We have a passionate and knowledgeable team with a good mix of industry veterans and newcomers who share an appreciation for the care and well-being of the White Sturgeon, and for the savory taste of good caviar. The Company has stayed in business for over 40 years by blending tradition with innovation and providing compassionate customer service every step of the way. We sell our sturgeon meat and caviar to distributors, retailers, and restaurants, and we also have a direct-to-consumer store offering a doorstep delivery service. Customers purchase these products with high expectations — and our team goes to great lengths to see them satisfied. Customer service is, and remains, a priority. And last, but not least, we run and maintain our farm and caviar processing facilities under the strictest of guidelines. We hold the requisite local and state licenses and certifications and are in full compliance with the strictures of the Convention on International Trade in Endangered Species (CITES).

We recently won the 2022 sofi™ Gold Award (Seafood Category) as well as the prestigious 2022 sofi™ Product of the Year award for our Royal grade. We are truly honored by these awards from the Specialty Food Association (SFA), and these awards just motivates us, even more, to continue doing our best.

Forrest Galante, Host of Disney's Animal Planet, gives a wonderful overview of Sterling Caviar and the amazing work we're doing in promoting a truly sustainable aquaculture operation. Take a look at it here: https://f.io/p96B9XRR
