Umai Bar & Grill is seeking an experienced and passionate Head Sushi Chef to lead our sushi kitchen and sushi bar. The ideal candidate will have extensive experience in sushi preparation, menu development, and kitchen/sushi bar leadership. They must be able to maintain high-quality standards, ensure food safety, and create an exceptional dining experience for our guests.

Key Responsibilities:

Oversee all aspects of sushi preparation, presentation, and execution.

Develop and maintain an innovative and authentic sushi menu, including seasonal specials.

Ensure consistency in food quality, portion sizes, and presentation.

Manage sushi bar staff, including training, scheduling, and performance evaluations.

Monitor inventory, control costs, and order supplies efficiently.

Maintain a clean and organized work environment in compliance with health and safety regulations.

Engage with guests to ensure customer satisfaction and accommodate special requests.

Collaborate with management to improve kitchen operations and menu offerings.

Requirements:

Minimum 8 years of experience as a Sushi Chef (preferably in a leadership role).

Extensive knowledge of sushi preparation, fish handling, and Japanese cuisine.

Strong knife skills and ability to work efficiently under pressure.

Experience managing kitchen staff and inventory control.

Understanding of food safety regulations and sanitation procedures.

Creativity in menu development and plating presentation.

Excellent communication and leadership skills.

Ability to work evenings, weekends, and holidays as needed.

Preferred Qualifications:

Formal culinary training or certification in Japanese cuisine.

Experience in high-end or high-volume sushi restaurants.

Knowledge of sake and Japanese beverage pairings.
