Looking to fill our Back-of-House TEAM for our new location in IRVINE! We are looking for experienced Line Cooks/Kitchen Assistant!
Job Title: Kitchen Assistant or Line Cook
Pay range: $19 - $21/hr + tips (DOE)
Location: ROL IRVINE, CA
Kitchen Assistant Roles and Responsibilities:
Operate the industrial dishwasher
Wash glassware and other implements by hand when necessary
Follow sanitation policies at all times
Provide assistance to prep cook and other kitchen staff as needed
Clean up spills or broken glassware immediately
Report any sanitation or janitorial issues to the appropriate party
Collect used kitchenware from dining and kitchen areas
Store clean dishes, glasses and equipment appropriately
Set up workstations before meal prep begins
Ensure there are always enough clean dishes, glasses and utensils.
Notify the supervisor when small wares are getting low.
Maintain cleaning supplies stock (e.g. detergents) and place orders when necessary (with supervisor’s approval)
Sanitize the kitchen area, including the floor, occasionally restroom deep cleaning
Perform opening, closing and side work
Follow the prep list / recipe packets created by chefs to plan duties
Label and stock all ingredients on shelves so they can be organized and easily accessible
Measure ingredients and seasonings to be used in cooking exactly as directed
Line Cook Roles and Responsibilities:
Prepare a variety of meats, seafood, poultry, and vegetables using various kitchen equipment such as broilers, ovens, grills, and fryers.
Portion, season, and marinate food items for various cooking methods.
Present dishes appropriately by following plate presentation guidelines and standards.
Follow recipes and food preparation guidelines to ensure consistency and quality.
Assist with inventory management and stock rotation.
Assist with food preparation.
Collaborate with other kitchen staff to ensure smooth operations during service.
Close the kitchen following the closing checklist and assist other departments with overall restaurant closing tasks.
Assist with any other duties as assigned by the Chef/Kitchen Manager or Restaurant Managers on duty.
Adherence to Health and Safety Regulations: Ensure compliance with all health and safety regulations, including proper food handling, sanitation, and cleanliness standards.
Maintain a clean and sanitary workstation, sanitizing surfaces, including floor, tables, shelves, grills, broilers, fryers, freezers, sauté burners, convection oven, flat top range, and refrigeration equipment, taking out trash regularly and occasionally performing restroom deep cleaning.
Adhere to nutrition and sanitation guidelines to maintain food quality and safety standards.
In charge of operating roller stations, serving customers, fulfilling customer requests as needed, cleaning the maki machine, sanitizing blades, and assembling and disassembling the machine.
Qualifications:
Training provided for Food Handler Card with paid training hours
Attention to detail and sanitation rules
Able to reach, bend, stoop and frequently lift up to 50 pounds
Able to work in a standing position for long periods of time
Ability to operate industrial machinery and carry loads up to 50 lbs
Ability to work in a hot, humid environment
Ability to follow instructions and help with various tasks, as needed
Flexible/Adaptable schedule. Available to work evenings, weekends and holidays
