Are you a skilled individual with a passion for sushi and leadership? We are seeking someone like you to join our team. This is a lead role in a new sushi delivery concept from Chef Daisuke Nakazawa. The big picture revolves around leading and managing the daily operations of the Hi.Dozo commissary kitchen, ensuring efficiency, adherence to quality standards, and a collaborative work environment.

This role involves overseeing the kitchen team, contributing to the preparation of food items, and maintaining the highest standards of cleanliness, safety, and food quality within the Hi.Dozo brand.

Responsibilities-

Team Leadership:

- Provide effective leadership to the kitchen staff, fostering a positive and collaborative work environment.

- Conduct regular team meetings to communicate goals, expectations, and updates.

- Oversee training and development initiatives to enhance the team's skills.

Operational Management:

- Manage day-to-day kitchen operations, ensuring efficiency and adherence to Hi.Dozo's quality standards.

- Schedule and coordinate staff shifts, considering workload and business demands.

- Maintain inventory levels and optimize ingredient costs.

Food Preparation and Quality Control:

- Actively contribute to the preparation of food items, ensuring adherence to Hi.Dozo's recipes and presentation standards.

- Conduct regular quality checks on food items to maintain consistency and excellence.

Safety and Sanitation:

- Enforce strict adherence to safety and sanitation protocols, including DOH regulations and guidelines.

- Conduct regular inspections to ensure cleanliness and organization in all kitchen areas.

- Implement and oversee proper handling and storage of food products.

Menu Development:

- Collaborate with the culinary team to develop and refine menus, ensuring they align with Hi.Dozo's brand and meet customer expectations.

- Introduce new culinary techniques and trends to enhance the menu offerings.

Collaboration with Other Departments:

- Ensure seamless coordination and communication with the Executive Chef and other members of management

- Participate in cross-functional meetings to address operational challenges and identify opportunities for improvement.

Essential Functions:

- Polished personal presentation; grooming meets Company standards, as outlined by Employee Handbook.

Communicates information effectively and efficiently.

- Able to work nights, weekends and holidays, and variable schedule, per the needs of the business.

- Ability to perform essential job functions under pressure, maintain professionalism when working under stress.

- Maintains general knowledge of the Hi.Dozo concept

Salary $70,000 - $90,000 based on experience
