Job Opening: Chef de Cocina – Mexican Gastronomy Specialist (Not Tex-Mex)

Are you passionate about the roots of Mexican gastronomy, from the moles of Oaxaca to the seafood of the Baja Californias, the street foods of CDMX to the heirloom ingredients of Yucatán?
We’re seeking a Chef with deep expertise in traditional and regional Mexican cuisine to lead our kitchen and bring the soul of Mexico to every plate.
As Head Chef, you will:
Lead the preparation of authentic, regionally inspired Mexican dishes, respecting indigenous traditions and ancestral techniques
Collaborate on a menu rooted in the cultural and culinary diversity of Mexico
Source and select high-quality ingredients, with a focus on native chiles, corn, herbs, and regional staples
Train kitchen staff in traditional cooking methods, including nixtamalization, handmade tortillas, moles, adobos, and salsas
Uphold Mexican culinary authenticity while offering creative presentations and seasonal variations
Ideal Candidate:
Deep knowledge of Mexican gastronomy, culture, and culinary history
Hands-on experience preparing a wide range of regional Mexican dishes
Passion for preserving traditional techniques and telling the story of Mexico through food
Strong kitchen leadership and organization skills
Culinary degree or formal training in Mexican cuisine preferred (but not required if experience is strong)
