The Production Manager will be responsible for safely and efficiently producing high quality charcuterie, smoked meat, and fresh sausage products. The position will require an understanding of meat processing, food safety, budgeting, and personnel management. It is preferable that the applicant has a background in food, particularly meat processing, and applicant must be able to lift at least 50lbs. This person must be able to work in a fast-paced environment, have a keen attention to detail, and be able to adapt to change with ease.
Responsibilities:
-Lead production of salami, smoked meats, fresh sausage and any other products produced in-house.
-Schedule all product production and team personnel in cooperation with Operations Manager and Fulfillment Manager to meet demand.
-Carry out food safety measures according to written HACCP and quality control program. (Driftless Provisions will pay for manager to become HACCP certified within a year of start date)
-Manage a small team, fostering a supportive culture and providing periodic reviews
-Oversee Work-in-Process inventory, recording all CCP data in a timely way
-Meet regularly with Operations Team to plan and communicate needs
-Manage assistant personnel assigned to production in conjunction with the Fulfillment Manager.
-Maintain accurate inventory of ingredients and supplies and reorder as needed.
-Communicate finished product timelines with team
-Perform and/or delegate daily clean-up
-Manage preventative maintenance of processing equipment
-Contribute to a dedicated, playful team culture
Some periodic weekend work for an hour or two – rotates between staff
