Job Summary:

Eastern Washington University is currently seeking an Executive Chef/Cook 3 - Float Schedule. This position will be responsible for daily food production with an emphasis on menu development and product usage. Responsibilities will also include catering, special events, and special diet meals - including plant based options. The position will also maintain quality and safety standards in Dining Services operations.

Typical Cook 3 Duties:

Daily production as needed

Schedules and assigns work; creates prep lists; establishes and maintains timelines

Prepares menus and recipes; determines production amounts; requisitions products; maintains records; creates reports

Trains and instructs others in cooking and food service work

Establish and maintain working relationships; maintain a positive kitchen culture

Plans meals, events, special diets

The salary for this position is $44,580 - $59,568. Where the hired candidate will begin within this range is dependent on education, experience, and skills. Required Qualifications:

High School Diploma or GED

Food Handlers Permit

Washington State Drivers License

Three years of food service work, including one year of lead experience, or equivalent education or experience.

Candidate must demonstrate interest, ability and/or experience promoting cultural competency, universal accessibility and/or diversity.

Preferred Qualifications:

2 years of college/university food service experience

2 years of high volume food production serving over 400 meals per day

1 year of supervisory experience

Culinary degree or related degree in the food service field

ACF Certification

Other Skills and Abilities:

Able to work at a rapid pace while maintaining attention to detail.

Ability to multi-task and accomplish goals.

Time management skills

Must have good communication and supervisory skills.

Must have good knife skills.

Job Duties:

Participates in and monitors large-scale preparation and service of food; prepares food items according to standard menus, recipes and verbal instructionsPercent of Time: 40

Instructs and trains employees. Provide expectations and direction to staff in cooking, preparing and handling foodPercent of Time: 15

Recipe development; assists in preparing menus and determining amount of food to meet menu requirements; keeps recordsPercent of Time: 15

Leads and participates in the cleaning of the kitchen and equipment; Maintains standards of sanitation and safety.Percent of Time: 10

Leads and participates in the storage and utilization of leftover ingredients and products; rotate stockPercent of Time: 10

Inventories and maintains necessary supplies and good for assigned mealsPercent of Time: 10

Conditions of Employment:

This position requires a valid food handlers permit and a drivers license.

This position requires the ability to work evenings and weekends.

During the course of university employment this position will be involved in the receipt of, or accountability for, university funds or other items of value; as well as the unsupervised access with the developmentally disabled, vulnerable adults or children under the age of 16. The offer of employment is contingent upon successful completion and passing of a background check prior to beginning employment.

Upon hire employees must comply with franchise requirements regarding clothing and appearance, if applicable.

All new employees will comply with EWU Immunization Policy 602-02 and provide proof of immunity or vaccination to MMR before beginning work at EWU. Waivers for the immunization requirements are available for medical or sincerely held religious beliefs.

Salary Information:
