Provide ongoing visual, probing and laboratory analysis of fresh and frozen seafood to ensure food safety and customer specifications are followed. Monitor the workmanship and quality of the product and take appropriate steps when expectations are not met to deliver our companies high standards for quality. Identify and understand production requirements. Maintain organized and accurate records for all inspections related to incoming and outgoing products. Assure all label requirements follow customer specifications. Provide up-to-date written communication to the customer relative to deviances in product related to size, color, or grade. Ensure that proper procedures are being followed. Knowledge of head & gutting, filleting, portioning, sectioning, freezing, and packaging of all fish and shellfish. Assisting other departments: Processing, Tally, Shipping and Maintenance to complete assignments that require quality control.
