Job Title: Kitchen Manager / Head Chef
Salary: $20/hr
Tip Income: Yes ($7-$12/hr average)

EDUCATION, EXPERIENCE, LICENSING REQUIREMENTS:
● High school diploma or GED
● 2 years minimum kitchen management experience: Head chef / sous chef / kitchen manager etc.
● Food experience in a high volume restaurant is preferred
● Current food handlers card and other certification as required by federal/state/local law
● Working knowledge of proper food handling procedures
● The ability to work in a team as well as independently
● The ability to work in a fast-paced environment
● Strong problem-solving and multitasking skills
● Proven ability to effectively communicate through verbal and written instructions
● Ability to stand or walk for 8-hour shifts and lift at least 50 pounds
● The ability to follow standardized recipes
JOB RESPONSIBILITIES INCLUDE BUT ARE NOT LIMITED TO:
Kitchen Management:
- Staffing: Job posting, interview, hire, and train new employees
- Scheduling: Work with GM to facilitate kitchen labor scheduling needs and cost management
- Facilitate smooth shift coverage for open shifts
- Operations: Oversee all kitchen operations and supervise staff
- Evaluate kitchen staff to maintain high performance expectations
- Ingredient procurement: select and order all raw materials based on menu selections
- Communicate with multiple vendors about needs
- Work within established budget and evaluate cost saving options
- Track finances and menu pricing to evaluate potential areas of waste
- Raw material and overhead inventory
- Maintain a clean and organized kitchen and workspace and verify staff is maintaining proper cleaning and sanitation procedures
- Ensure proper upkeep and preventative maintenance on all kitchen equipment
- Establish written SOPs, formulas, and recipes for all processes and menu items and keep good records
Head Chef:
- Work with management to develop new, exciting, and creative menu items
- Create seasonal menu items, weekend food specials, and quarterly beer pairing dinners
- Maintain current menu’s quality and work to improve efficiencies and cost control
- Juggle multiple vendor relationships and various product delivery dates or pick-ups
- Listen to customer complaints and suggestions to help resolve complaints
Cooking Duties:
- Prepare fresh pizza dough as needed according to baker’s instructions
- Prepare pizza sauces, and various toppings, such as tomatoes, peppers, mushrooms, onions, and meats to ensure a proper inventories for service
- Ensures smooth operation of kitchen services and prepares kitchen for shift change
- Serves meals by reviewing recipes; assembling, combining, and cooking ingredients, and maintaining a sanitary kitchen
- Monitors the temperature of the pizza ovens as well as cooking times and timers
- Adheres to proper food handling, sanitation, and safety procedures and maintains appropriate dating, labeling, and rotation of all food items.
- Disposes of expired or spoiled ingredients at the end of each shift.
- Maintains cleanliness and sanitation of equipment, food storage, and work areas.
- Completes cleaning according to daily and weekly schedules and dishwashing/pot washing as needed.
- Communicates all maintenance needs to management
