As the Sous Chef / Senior Shift Lead, you will serve as an extension of our leadership team, ensuring that all kitchen operations maintain the highest standards of productivity, cleanliness, ticket speed, and accuracy—regardless of whether senior leadership is present or not. You will be my eyes, ears, and hands across all locations, providing oversight and consistency while reinforcing our expectations for quality and efficiency.
This position will be starting out as hourly but can move to salaried for the right person.

Core Responsibilities:
Operational Oversight & Leadership
Possess the ability and willingness to travel to whichever location requires oversight the most during our busiest times.
Serve as the on-site leader when senior management is unavailable, ensuring smooth and consistent kitchen operations across all locations.
Maintain and enforce kitchen standards for speed, accuracy, and cleanliness to uphold the expectations set by senior leadership.
Provide clear direction and support to all back-of-house (BOH) staff to ensure efficiency and consistency during service.
Identify and address operational issues and inefficiencies in real time to maintain seamless service.
Act as a direct point of contact for kitchen-related concerns, troubleshooting issues as they arise.
Ability to work nights, weekends and holidays is required.
Reliable transportation is also required as you will be required to work at multiple locations.
Quality & Consistency Control
Ensure all food items are prepared according to Triple Crossing Beer’s recipes, standards, and specifications.
Monitor food quality, portion control, and plating presentation to maintain brand consistency. No burnt pizzas or overcooked burgers!
Oversee ticket times and ensure orders are executed quickly and accurately, preventing delays or inconsistencies.
Regularly check station prep levels to ensure readiness for service while minimizing waste.
Cleanliness & Food Safety Compliance
Enforce all sanitation, health, and safety regulations to maintain a clean and compliant kitchen environment.
Conduct regular walkthroughs and inspections to ensure proper food handling, storage, and cleanliness at all workstations.
Hold staff accountable for proper hygiene and safety practices, addressing any lapses immediately.
Team Development & Communication
Lead by example with a strong work ethic, professionalism, and a positive attitude.
Provide coaching and mentorship to line cooks and kitchen staff to foster a culture of continuous improvement.
Communicate effectively with BOH and FOH teams to ensure service runs smoothly.
Assist in onboarding and training new kitchen staff, reinforcing expectations and best practices.
Lead by example. It’s on here twice because it’s just that important.
Inventory & Cost Control
Monitor inventory levels and communicate needs to ensure proper stock levels without over-ordering.
Assist in minimizing waste through proper storage, rotation, and portioning. FIFO needs to be maintained.
Support cost-control efforts by maintaining efficient use of ingredients and reducing unnecessary waste.
Learn and maintain your working knowledge of our ordering platforms and assist in inputting data into xtrachef to maintain food costs and inventory levels.
Problem-Solving & Decision-Making
Quickly assess and resolve kitchen-related issues to maintain operational efficiency.
Identify potential challenges before they escalate and implement proactive solutions.
Maintain composure under pressure, ensuring the team remains focused and productive. This is especially important when it’s busy, you will be looked upon as a pillar of leadership when I’m not there.
