Server and Bartender

Service of food and/or beverage to include the order-taking and delivery of any food and/or beverage items. This task is to be handled in a friendly, courteous, helpful, timely, and professional manner resulting in a very high level of guest satisfaction.
Essential Duties and Responsibilities:
Check station before, during, and after shift for proper set-up and cleanliness.
Greet the guest in a friendly and courteous manner and explain any specials and/or restaurant promotions for guest awareness.
Record the details of the order from the guest, repeating the order to the guest to check for accuracy.
Input the order into the point-of-sale computer to inform the kitchen of the particulars of the order being placed.
When complete, retrieve orders up to 30lbs. from the kitchen, confirm their accuracy, lift, and deliver to guests along with appropriate condiments. Abide by State, Federal, and corporate liquor regulations of serving alcoholic beverages to minors and intoxicated guests.
Replenish beverages as necessary and check with guests for overall satisfaction.
Market and serve upon request any dessert items or specialty coffees.
Present the check to guests promptly.
Regular Attendance in conformation with standards, which may be established by
Lajitas Golf Resort from time to time, is essential to the successful performance of this position. Associates with irregular attendance will be subject to disciplinary action, up to and including termination of employment.
Support Functions:
Assist with the bussing help in clearing and resetting the tables.
Perform all assigned side work including replenishing condiments and restocking side stands.
Perform any general cleaning tasks using standard hotel cleaning products as assigned to adhere to health standards.

Basic cooking skills & techniques in all existing kitchen stations: Salads, Desserts, Broiler/Grill, Sauce/Sauté, Fryer and Vegetables
Basic overview of all kitchen stations
Advanced overview of a single station
Advanced verbal and written communication skills such as describing daily specials, writing prep list
Good knowledge of Meat and Fish cooking temperature and stages of doneness
Basic knowledge of large-volume food preparation
Basic knowledge of Cakes & Individual Pastries
Basic knowledge of Garde Manger plate & platter presentation, Fruits and Vegetable carvings
Must know how to clean, fillet, marinate, and properly store most Fishes
Must know how to clean, bone, tie, portion, marinate, and store most prime-cut meat & poultry
Good food portioning skills
Basic knowledge of American regional cooking
Some knowledge of international cooking techniques and basic recipes
Basic recipe knowledge in Meats, Fish, Vegetables, Fruits, Stocks & Sauce preparations
Basic food purchasing & receiving knowledge. Must know how to read an invoice
Basic knowledge of accounting procedures such as inventories, recipes, and menu costing
Some leadership knowledge
Basic knowledge of kitchen cleaning chemicals
Basic kitchen organizational skills
Intrinsic desire to become a Culinarian in all aspects

Room and Board
Low-cost private/unfurnished employee housing is available on site depending on availability and your needs. Depending on unit size, rents ranges in price.
Personal RV - $50.00 (bi-weekly)
Lajitas RV Efficiency - $50.00 to $55.00 (bi-weekly)
Lajitas RV Standard - $82.50 (bi-weekly)
Lajitas RV Large - $92.50 (bi-weekly)
Efficiency Apartment - $42.50 to $69.00 (biweekly)
One Bedroom Apartment - $122.50 to $149.50 (biweekly)
Two Bedroom Apartment - $173.40 (biweekly)
Rents and electricity fees are payroll deducted. Once a month you are billed for 50% of the cost of electricity for your individual unit’s metered electric use (the company pays the other half). There are no other utility charges.
Landline telephone, internet, and satellite TV services are available to you at your choice through local area service providers.
Please Note: Housing units differ for full time employees and seasonal employees. We do not offer dorm-style housing, however, employees can share a unit with a co-worker with both names on the lease agreement. These are stand-alone units and are not furnished so you will have to bring your own furniture and household items. A refundable housing deposit is required.

Getting Here and Getting Around
We are located on Highway 170 where the road bends to meet the Rio Grande which is 17 miles southwest of the junction of Highways 118/170 at Terlingua, Texas. The resort is tucked between Big Bend National Park and Big Bend Ranch State Park.
To put it in perspective, we are approx. 200 miles to the closest Wal-Mart in Fort Stockton, and 95 miles to the closest McDonalds or stop light in Alpine! We are here because we love the remoteness. No traffic, no big-city lights, creates an environment of peace and quiet and unsurpassed stargazing!
While a vehicle is not required at the resort with housing close to the facilities, a vehicle is useful for major shopping or outing trips to Presidio, located 55 miles southwest from the resort, or Alpine, located 95 miles north of the resort.
For Fun
The Big Bend region is full of adventure and places to explore! Whether you want to hike the national and state park, or hike right out your front door on the resorts 27,000 acres! We also have river access so you can kayak, paddle board or just go swimming whenever you like! Like mountain biking? We have hundreds of miles of trails to explore. Like to play music? The eclectic town down the road of "Terlingua" has some restaurants and bars that feature open mic nights for local musicians!
There are more restaurant and shopping opportunities as close as 12 miles away. A full day trip could take in the Big Bend National Park, Big Bend Ranch State Park, Fort Davis, and its historical park and town; the McDonald Observatory; art, shopping, and the Sul Ross State University in Alpine; the Marfa Lights and the town of Marfa; and much more!
