Key Responsibilities:
Fish Butchery:
o Receive, inspect, and prepare whole fish for use in sushi and sashimi, ensuring optimal quality and minimal waste.
o Execute precise cuts for filleting, deboning, and portioning fish according to specific sushi preparation needs.
o Handle a variety of seafood, including tuna, salmon, snapper, and seasonal spices.
Quality Control:
o Ensure all seafood is handled and stored in compliance with food safety standards.
o Monitor the freshness and quality of fish, discarding any items that do not meet quality expectations.
Preparation Support
o Assist in the preparation of other sushi components, including rice and garnishes, as needed.
o Maintain a well-organized and stocked fish prep station.
Sanitation and Safety
o Adhere to strict hygiene standards, including cleaning tools, surfaces, and equipment after use.
o Follow food safety regulations, including proper storage and labeling of seafood.
o Safely handle sharp knives and heavy fish with care to prevent injuries.
Qualifications:
Previous experience in fish butchery, sushi preparation, or culinary roles involving seafood is preferred.
Strong Knife skills and knowledge and fish autonomy.
Physical ability to lift heavy fish and stand for extended periods.
Pay and Schedule:
Hourly Pay: Starting at $20 an hour. Pay depends upon experience.
Full-time: 30-40 hours a week
Part-time: 10-30 hours a week
Open to full-time and part-time positions.
