About Ends Meat

Ends Meat is a Whole Animal Salumeria and Butcher Shop (and prepared foods retailer) with locations in the NYC metro area. We focus on whole animal butchery, working exclusively with regional farms committed to sustainable and regenerative agriculture. Our mission is to provide high-quality fresh butchery, farm-fresh produce, fermented products, and hot lunches, alongside our traditionally inspired dry-cured meats.

Description of the Role

The Porter is a key member of the back-of-house team, responsible for ensuring that all sanitation procedures are met and followed in compliance with food safety regulations. This role plays a crucial part in maintaining a clean, organized, and food-safe environment across the kitchen and retail butcher areas. The Porter assists with closing duties, including deep cleaning kitchen and retail equipment, sanitizing all tools and surfaces, and securing the facility at the end of each shift.

This role requires attention to detail, efficiency, and a commitment to upholding the highest standards of cleanliness and food safety. The Porter reports directly to the Retail Operations General Manager and must be able to pivot between different cleaning and prep tasks throughout the shift.

Core Responsibilities

Sanitation & Kitchen Maintenance

Work quickly and efficiently to clean and sanitize all tools, kitchen equipment, work surfaces, floors, and walls.

Maintain a food-safe environment by following proper sanitation protocols for surfaces, displays, and equipment.

Adhere to the First In, First Out (FIFO) rule, ensuring all ingredients are appropriately labeled and dated.

Ensure proper waste disposal and recycling procedures are followed.

Food Prep & Support

Assist in the preparation of assigned ingredients, sauces, soups, sandwiches, and other prepared foods.

Support kitchen staff with basic food prep tasks such as portioning and packaging ingredients.

Keep an organized and sanitary workstation.

Inventory & Equipment Handling

Maintain strict inventory of cleaning supplies and notify management when restocking is needed.

Ensure all equipment is properly cleaned and stored after use.

Independently close the kitchen, following standard operating procedures (SOPs) for cleanliness and security.

Job Requirements

Ability to lift and carry up to 50 lbs.

Comfortable working in a physically demanding environment, including standing for extended periods (up to 10 hours per shift, 40 hours per week).

Ability to perform tasks that require crouching, kneeling, grasping, and fine manipulation.

Strong communication skills and the ability to prioritize daily cleaning tasks effectively.

Willingness to take on new tasks and adapt to changing needs within the kitchen environment.
