About Us: Bonito 47 is a Brand New location in Midtown Manhattan with a full-service fully outfitted 15-seat Omakase

Bar. We are dedicated to delivering a unique culinary experience that combines tradition with innovation. With our

new location in midtown, we aim to incorporate the Japanese tradition into our menu while maintaining the highest

standards of culinary excellence.also we do full sushi menu.but separate bar.

Responsibilities Include but not limited to:

● the sushi team with efficiency, ensuring smooth operations during service and maintaining

consistency in scheduling.

● Present Omakase guests with detailed descriptions, showcasing your knowledge and passion for the craft

to enhance the dining experience.

● Expertly cut, chop, slice, and filet various produce and proteins, focusing on different types of fish

maintaining quality & standards.

● Inspect the quality of all ingredients, including Japanese fish and high-quality seafood, ensuring freshness

and adherence to NYC Dept of Health Standards.

● focusing on quality, portion size, presentation, and food safety.

● Sterilize all utensils, instruments, and equipment used in sushi preparation before, during, and after each use

to maintain cleanliness and hygiene.

● Interact with guests in a professional and courteous manner at the open Omakase bar,

providing an engaging dining experience.

● Wash and prepare sushi rice, a crucial component of every sushi dish, to maintain quality.

● Set up the sushi bar, ensuring it is organized, clean, and ready for service.

Requirements:

● Proven experience as an omakase sushi chef or sushi chef, with a strong understanding of Japanese culinary traditions.

● Extensive knowledge of various fish species and their preparation methods.

● Ability to work well under pressure in a fast-paced environment.

● Strong attention to detail and commitment to maintaining high-quality standards.

● Understanding of kosher dietary requirements is preferred but not required.
