Hudson & Charles is a nose to tail sustainable butcher shop located in NYC's West Village and Upper West Side. We are committed to a sustainable philosophy and whole animal utilization. Our animals arrive to our shops whole (lamb& goat), split (pig) or quartered (beef, veal and always 100% grass-fed). All animals are sourced from small local family owned and run farms in New York State and Pennsylvania. Our farmers raise their animals antibiotic free, hormone free and steroid free on farms using regenerative agricultural techniques.
We are looking for an experienced whole animal butcher who will be responsible for breaking whole beef carcasses, pig, lamb and goat. We take great pride in our cutting and sourcing just as much as our customer service. We think our customers are an extension of the H&C community and want a candidate who loves talking to the public about our philosophy and all meat related things. Excellent customer service is an absolute must for us.
This position is for a FT butcher, 40 hour schedule. We work in a fast paced environment so it doesn't hurt to have a sense of humor, comfy shoes, a good attitude and be to be highly motivated.

Daily responsibilities include:
Unloading deliveries
Breaking beef, pig, lamb, goat to sub primals
Fabricating poultry
Cleaning muscles for retail sales
Case set up
Organizing and keeping the walk-ins clean
Help filling customer orders
Assisting customers with instructions on cooking preparations, cut alternatives
Assisting in training our apprentices
Requirements:
Ability to lift 100+ pounds
Be available for holidays
Be highly organized
Be self motivated
Be able to break a full beef into retail cuts in one 7.5 hour shift
Work as part of a team
