Primary Responsibilities include:The creation, execution and completion of the daily and weekly prep and production schedules for the pastry department.Prepare a full variety of baked goods including breads, cakes, cookies, pastries, and various other desserts and check pars of items against the prep list.Create unique desserts crafted in line with the identity of Taverna Banfi, The Regent Lounge, In Room Dining, and seasonalityCreate personalized cakes utilizing multiple methods of decorating: fondant, piping techniques, artistry and sculptureAssist with ordering and inventorying of pastry items (store bought desserts, cookies, pastries, and specialty items)Monitoring temperatures of all prepared foods, and record them as requiredProviding functional supervision and training to Pastry team and student cooksWorking closely with kitchen leadership to solve problems and make sure the guest is getting a quality experienceSupporting other team members when ableCleaning work area and storing all food after each shift or when needed or directed to by kitchen leadership and policyFilling out prep lists, closing the shift while adhering to operating standardsMaintaining a positive and professional approach with coworkers and customersSupervise Daily OperationsSupervise all facets of daily operation of the pastry department, opening and closing department when needed.Able to lead team and guide with technique and proper pastry/culinary principles.Make sound decisions that are both in the interest of our guests as well as the hotels financial needs.Financial ManagementCan assist when needed with inventory of pastry storage areas.What We Are Looking for in a Management Team Member:Statler Hotel leaders are expected to lead with hospitality.
