This person will lead and support the Food and Nutrition Program personnel in all MN Veterans Homes to improve and ensure quality of service is achieved – serving as the subject matter expert for quality food production. This person is responsible for facilitating education and training to all MN Veterans Homes Food and Nutrition Departments. The position is responsible to support the initiation and maintenance of various programs that impact the operations and clinical service delivery such as technology programs as directed. This position serves as a team member of the central office food and nutrition program and will be responsible for assisting in clinical nutrition and food service duties in the absence or leave of Food and Nutrition staff within the agency as needed. This person must have the ability to travel and assume responsibility for kitchen operations and clinical nutrition services as needed.Minimum QualificationsTo facilitate proper crediting, please ensure that your resume clearly describes your experience in the areas listed and indicates the beginning and ending month and year for each job held.
Registered Dietitian and Licensed Dietitian with the Minnesota Board of Dietetics and Nutrition Practice.
Three years of experience designing, implementing and evaluating the effectiveness of nutritional programs/services in long term care or residential care.
Knowledge of long term care food and nutrition safety and resident care standards.
Knowledge in the principles and practices of nutrition and food production sufficient to evaluate and critique food and nutrition programs to ensure quality and continually improve processes.
Human relations skills sufficient to establish and maintain effective working relationships with people of diverse backgrounds at all levels of the organization.
Data analytics sufficient to recognize trends and identify current and evolving issues.
And
Successfully complete necessary requirements to have or obtain (within 6 months of hire) the certifications necessary to provide food safety education:
ServSafe Certification through the US National Restaurant Association and
Certified Food Protection Manager Certification through the Minnesota Department of Health
Preferred Qualifications
Experience working with committees and/or project leadership/ management.
Experience with providing food safety education, such as Servsafe training or other related training.
Experience cooking regular texture and altered menu items for large scale cooking, sufficient to educate and teach others on dysphagia diet guidelines and production.
Experience working with menu management system such as Point Click Care nutrition management, GeriMenu, MealSuite, etc.
Experience or training in continuous improvement methods, such as Lean, Six sigma, etc.
Experience evaluation of food costs, supplies and/or labor expenses.
Knowledge of State of Minnesota purchasing and procurement laws, rules and guidelines.
