Executive Chef/Kitchen Manager

Executive Chef/Kitchen Manager Responsibilities and Duties:

Your role as Executive Chef/Kitchen Manager at The Engine House is crucial in ensuring the smooth and efficient operation of our kitchen, contributing to the overall success of the restaurant. You will be responsible for a variety of duties and tasks, focusing on food cost management, labor cost control and menu variety.

1) Food Cost Management

Monitor and manage the kitchen’s inventory, ensuring optimal levels of ingredients and supplies

Implement effective inventory control measures to minimize waste and control food costs.

Work closely with suppliers to negotiate favorable pricing and maintain high quality standards.

Regularly review and analyze food costs, identify areas for improvement and implement cost saving strategies

Develop and update recipes that optimize cost efficiency without compromising quality.

2) Menu Variety

Create diverse and appealing menu options/specials that caters to different tastes and dietary preferences,while also

maintaining our current menu.

Regularly review menu performance, seeking feedback from customers and analyzing sales data.

Introduce seasonal menu items and specials to keep the menu fresh and engaging.

Ensure consistency in food quality and presentation across all menu items.

Monitor industry trends and incorporate new and innovative dishes to enhance menu variety.

3) Labor Cost Control

Create and manage kitchen staff schedules, optimizing labor costs while maintaining efficient operations.

Monitor and control overtime, ensuring adherence to the approved labor budget.

Train kitchen staff on efficient work practices and time management to maximize productivity.

Implement performance metrics to assess staff productivity and identify areas for improvement.

Work closely with the owner to address staffing needs, hiring, and training.

4) General Responsibilities

Oversee kitchen staff, providing leadership, guidance and support

Maintain a clean and organized kitchen environment, adhering to health and safety standards, including scheduling

regular maintenance/cleaning of equipment.

Communicate effectively with wait staff and management to ensure seamless restaurant operations.

Participate in regular management meeting to discuss overall restaurant performance and improvements.
