Purpose:
Mixes 100% sourdough bread dough, participates in dough shaping, and maintains a clean and organized workspace
Assists with other bakery tasks as able, such as cleaning, minor maintenance, and customer service
Hours: Wednesday-Saturday 7:30am-5pm

Required Qualifications:
Food service experience and skills such as food safety awareness, rotating stock, and using kitchen tools
Basic understanding of baker’s percentages, metric weights, wheat characteristics, and fermentation
Excellent communication and teamwork skills
Must be able to lift 50lb alone and 125lb with a partner
Enthusiasm for making great bread
Preferred Qualifications:
Customer service experience
Food or retail sales experience
Responsibilities:
Functions as an assistant to the bread baker by managing mixes and bulk dough proofing
Gathers materials, maintains an organized workspace throughout the day, and clears the workspace before shaping
Measures ingredients and oversees the first mix and autolyse for all daily bread mixes following Hungry Ghost recipes
Pays attention to many different variables such as temperature, hydration, and flour composition and troubleshoots alongside the baker to ensure proper fermentation
Organizes and monitors inventory for bread ingredients such as spices, seeds, herbs, and many varieties of flour and other grains
Prepares the loaf dusting flour mixes ahead of shaping time
Participates with other staff to prepare the baskets, couches, bread racks, and sheet pans as able throughout the day and ahead of shaping time
Shapes loaves alongside the shaping team
Stacks 50lb flour bags and makes daily trips to retrieve 50lb flour bags from the flour storage annex outside of the bakery
When able, assists counter staff with dishes, sales, and answering the phone
Working Conditions:
The bakery is indoors with a ramp up to the front door and four outdoor steps descending to the back door
The mixer makes daily trips to the outdoor flour storage unit very close to the bakery, and the entrance to the storage unit is not flush with the ground.
Due to our wood fired bread oven, the bakery is always warm or hot and mild to moderately humid
Some private parking is available for staff, and the bakery is adjacent to many streets with metered parking
Daily bakery work involves standing, walking, bending down, heavy lifting, and fine motor tasks
