The Portland Regency Hotel & Spa is looking for full-time Cook to join our culinary team!
Eighteen95 Restaurant & Armory Lounge. A beautiful Historic Hotel of America located in the heart of Portland's Old Port District.
These are year-round, full-time position approx. 30- 40 hours per week. Weekends/holidays a must on a rotating basis.

Essential Functions for Cook:
Prepares all food relating to dinner service, in both the restaurant and the lounge
Assists with dinner specials for the evening.
Prepares potato, vegetable, and rice of the day.
Assists with the employee meal and prepares as needed.
Sets up and breaks down dinner line.
Keeps cold food below 40 degrees and hot foods above 140 degrees.
Changes ice in walk in #2 at the end of shift.
Practices the first in/first out rule on all beef, poultry, seafood, dairy and produce.
Assists in preparing and serving dinner banquets as time allows.
Maintains a clean and safe work area.
Cleans and sanitizes the work line at the end of shift.
Responsible for disposing grease from grease trap (in back storage room) on a daily basis, as well as recording the amount of grease collected.
Locks all doors and coolers and returns keys to the Front Desk at the end of shift.
At the end of the shift make sure that everything is properly wrapped and labeled
Records temperatures at the end of shift on refrigerator-temperature log
Keep PM dishwashers working and on task
Complete any banquet prep lists that have been left by the chef
Listens and calls back to expediter.

Mathematical Skills: The ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals is required. Also required is the ability to compute rate, ratio, and percentages using units of American money and weight measurement, volume, and distance.
Certificates, Licenses, Registrations: ServSafe
Education and/or Experience: High school diploma or general education degree (GED); or 1-year related experience and/or training; or equivalent combination of education and experience.
Language Skills: The ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals in required. Also required is the ability to write routine reports and correspondence. Lastly the ability to speak effectively before groups of customers or employees of this organization will be required as well. Must speak upper-level moderate English.
