Bar Harbor Catering Company and Abel's Lobster is seeking a Head Baker for the busy 2025 season. The position is an hourly, full-time, seasonal (May - October) role in Bar Harbor, Maine. BHCC and Abel's Lobster are locally-owned establishments with reputations for excellence and expert execution. Head Baker Accountabilities:
Follows the daily instructions of the bakery lead and/or other supervisory staff in the safe, timely, organized and efficient production of baked goods, sauces, dessert components, and/or cleaning tasks
Develops schedules, processes, and procedures to accomplish the bakery’s daily and weekly goals with efficiency and accuracy
Maintains sanitary workspace in accordance with ServeSafe regulations and chef instruction
Displays sound, safe judgment when working with knives and other equipment
Requests clarification from Executive Chef when needed to prevent accidents, food safety or sanitation issues, and/or less than satisfactory products
Has awareness of common allergens when working and keeps potentially hazardous foods separate and labels all common allergens when preparing recipes
Follows all recipes as written and defers to chef before diverting from standardized ingredients and/or procedures
Bakes pies, cakes, cookies, and other pastries.
Measures and mixes ingredients to form dough or batter by hand or using an industrial mixer.
Cut dough into uniform portions with a knife or divider.
Molds dough into loaves or desired shapes.
Place shaped dough in greased or floured pans.
Garnishes products as directed
Packages products for delivery to events and Abel’s using proper technique, with appropriate counts, labels and packaging that ensures the safe arrival of the product to its destination
Assisting with Abel’s needs and/or event sites as dictated by business needs

Head Baker Qualifications:
Education: Culinary/bakery certification
Experience: 2+ years of bakery leadership experience
Must be able to lift 50 lbs and stand on feet in a hot environment for the duration of the 8 hour shift.
Head Baker Required Skills:
Excellent verbal and written communication
Monitoring commercial kitchen equipment and bakery staff production with professionalism and responsibility
Coordination with Chefs and ownership to ensure company needs are met
Accurate and effective time management
Active and ongoing learning
Independent decision making
Excellent judgement
