· Proven ability to prepare unique, creative dishes with minimal guidelines.
· Proven ability to lead a prep team and cook line with production sufficient to meet current volume expectations, with ability to personally step into any role of the team as needed.
· Proven ability to manage all aspects of the kitchen operation to ensure proper inventory controls, cost controls, sanitation, and organization.
· Manager Certification in food safety
