Salud Hospitality is looking for a Sous Chef to join Executive Chef Macku Chan’s Michelin recommend Japanese restaurant Komo on Randolph Street’s Restaurant Row!
Komo combines two traditional coursed eating styles “Kaiseki” and “Omakase”. The obvious definition of “como” spelled differently in Spanish means “to eat.” The not so obvious, is a wonderful story of a unique multicultural friendship between its founders. Collectively the duo aims to share a taste of their respective backgrounds.
Sous Chef Responsibilities:
Assist in ordering all products and coordinating seafood orders with Check Macku. Overseeing all inventory to control
low pars and low food costs – this includes dry goods.
Upholding Chef Macku’s standards, quality control, and accurate recipe execution
Works well within a team environment
Able to delegate and manage a kitchen team with professionalism and empathy
Ensuring clean and organized work spaces, so that all health and safety standards are met.
Conducting daily walk-throughs for line checks, prep lists, temp logs, order guides, etc.
Reports to Chef Macku in menu planning and kitchen meetings.
Fish butchery experience is strongly preferred.
Sushi experience specifically related to sashimi and nigiri is required
Ability to lift 50lbs
Ability to stand on your feet in a kitchen environment for long periods of time.
Safely and effectively use all necessary tools, equipment, & cleaning chemicals
Ability to bear exposure to hot and cold environments
Additional responsibilities may be added or removed at the discretion of management and ownership
Desired Qualifications
At least 2 years of sous chef experience
At least 1 year of prior sushi experience
Patient and empathetic to both FOH and BOH teammates
Clean and highly organized
Efficient multi-tasking
Ability to stay calm, cool, and professional in a fast-paced, high-volume kitchen
Ability to speak English and Spanish is a plus, but not required.
Pay is salary based on experience. We offer dining perks, 401k, and a bi-annual bonus package based on performance.
