What you will be doing:Reporting to the Executive Sous Chef, responsibilities and essential job functions include but are not limited to the following:Directly oversee the Fairmont Orchid’s Banquet operation. It is 100,000+ square feet of indoor/outdoor Banquet Space. Direct some of the largest events on Hawaii Island. Scope of work ranges from multiple day conventions to intimate weddings to community events.Manage Colleague Dining to ensure high quality and diverse offeringsAssist with PM Gold Floor productionPartner with Banquet department to ensure proper setup and serviceTeam with Stewarding on equipment management and timely food deliveryCollaborate with the Catering and Conference Service team on client needs and menu developmentActively participate in Pre-Convention meetingsLead, mentor and train the Food & Beverage Operations teamEnsure Food & Beverage relevant brand standards are maintainedStrategize on new products and service offeringsConsistently offer professional, friendly and proactive guest service while supporting fellow ColleaguesMaintain and enhance the food products through creative menu development and presentationFollow all safety and sanitation policies when handling food and beverageOrder food, operating supplies and equipmentMonitor and manage Food CostLabor Control/accuracy through scheduling and payroll analysisLead meetings with direct reportsParticipate in colleague review process
