About the Role
We’re hiring a reliable, detail-oriented Food Truck & Kitchen Manager to lead day-to-day operations of a branded mobile food truck activation serving Salvadoran and Guatemalan communities across the DC Metro Area. This role is critical to the success of a five-month food truck activation produced by Auctus Agency.
You’ll be the primary steward of a fully wrapped, permitted food truck — overseeing food prep, chef coordination, truck operations, and health/safety compliance. Think of this as a hybrid kitchen lead, operations supervisor, and mobile-unit captain.
What You'll Do:
Truck Oversight
- Drive, position, secure, and maintain an 18-ft, fully equipped food truck
- Operate and supervise use of onboard equipment:
2 deep fryers, 4-burner range, flat-top grill, oven, salad prep fridge, freezer
AC, generator, propane, 3-compartment sink, hand sink
- Manage truck utilities: propane levels, generator startup, greywater disposal
- Complete daily pre/post shift inspections: cleanliness, power, fuel, compliance

Kitchen Operations
- Lead daily food prep and service in coordination with rotating community chefs
- Maintain portioning, prep batch plans, and daily production logs
- Ensure food safety and sanitation protocols per MD/DC mobile unit guidelines
Chef Coordination
- Onboard and support rotating Salvadoran & Guatemalan chefs
- Align menu execution with truck equipment and event volume
- Ensure smooth workflow and cleanliness throughout each activation

Compliance & Safety
- Maintain all required logs (temp checks, FOG handling, cleaning)
- Ensure compliance with mobile food unit standards in MD, DC, and VA
- Serve as the on-site escalation point for any food safety or equipment issues
Activation Support
- Coordinate with Tour Manager and Event Producers for load-in/load-out
- Support setup of signage, branded assets, and food service zones
- Manage kitchen flow in sync with Brand Ambassador engagement flow
What We're Looking For
- 3+ years in food truck, mobile kitchen, or BOH management
- Certified Food Service Manager license valid in Prince George’s County, MD — or a Maryland-recognized reciprocal license
- Demonstrated mobile food compliance knowledge (FOG handling, greywater, temperature control)
- Spanish-English bilingual fluency (required) — this is a community-first role
- Ability to safely operate a step van-sized truck (no CDL required, but clean record is mandatory)
- Comfort working long shifts in heat; must be able to lift 40+ lbs and stand for extended periods
- Familiarity with Salvadoran and Guatemalan cuisine is strongly preferred
Commitment & Location
- Availability: September 2025 – January 2026
- Location: Based in/near Langley Park, MD with activations across DC metro
- Schedule: Mostly weekday activations (6 hours/day + setup), with occasional weekends or community tentpoles
Compensation
- $30 - $35/ Hour. Competitive hourly rate commensurate with experience
- Bonuses for activation uptime, compliance, and chef satisfaction
- Travel & parking stipends provided
- All hours logged and reconciled monthly
