Branded Rock Canyon Ranch (www.BrandedRockCanyon.com) is seeking to add a skilled Sous Chef to our culinary team during the peak guest season. Branded Rock Canyon is a 15,000 acre private guest ranch in western Colorado. We offer world class luxury accommodations and superb western hospitality for our guests. The ranch is a popular destination for corporate and private group retreats. Our activity program includes precision shooting and hunting courses, fishing, 4x4 touring, horseback riding, wingshooting, and other outdoor activities. Typical group sizes are 15-30 guests, averaging 4 nights. Busy season runs early April - end of December, with winter months reserved for smaller groups, time-off, and maintenance.

This position runs through December 31, 2024. Consideration for full time, or renewed seasonal hire may be offered at the conclusion of the period, but is not guaranteed.

As this is a private residence and guest ranch, staff members must adhere to a non-smoking and no drug use policy.

The primary duties of this position include:

Assisting the Executive Chef with meal preparations

The primary shift will be mornings (6am - 2pm) and include breakfast preparation, and prep of lunch and dinner with Executive Chef.

Preparing meals and food to meet the specifications of guests in a timely manner

Properly measuring kitchen ingredients and food portions

Ensuring kitchen and serving staff adhere to set standards, procedures, department rules and sanitation requirements

Using kitchen knives and equipment such as grills, ovens, steamers and warmers in food preparation

Managing the kitchen inventory and ensuring supplies are fresh and of high quality

Ensuring proper food temperatures when cooking and proper storage afterward

Keeping the workstation and kitchen equipment clean, organized, and sanitized

Taking charge of kitchen opening or closing and other side duties as directed by the Executive Chef.

Skills Required:

Exceptional cooking skills

Familiarity with the best practices in the hotel and catering services industry

Knowledge of health and safety standards

Ability to multitask and work quickly under pressure

English verbal and written communication skills

Attention to detail and organizational skills

Able to take directives from male or female superiors

Possess a positive and welcoming attitude toward fellow staff members and guests of the facility.

Proof of USA citizenship. If you are not a citizen of the USA, you must provide proof of Green Card or work VISA. Must be able to effectively communicate oral and written English language.

Must have valid/current driver’s license and personal transportation 4x4 or AWD vehicle suitable for area roads and weather conditions.

Must be able to safely lift up to 50 pounds.

What to expect as a part-time seasonal employee during the months of June - December 2024:

Between 30-50 hours per week, depending on your availability, Executive chef needs, and guest group requirements.

Fractional gratuity split between all hourly wage staff members, when available from paying guests. This additional compensation is usually very rewarding.

Advance notice of scheduled events

Possibility for advancement to a full-time position with benefits, or renewal of position for the full season of April-December 2025.

On-site housing is NOT provided, though temporary staff quarters are available if needed during guest group visits and scheduled shifts. However, very affordable housing is available within a short driving distance from the lodge.
