Must know how to do the following and must be able to adapt to our reataurant as all restaurants are slighly different.
-break down fish
-cutting fish for sashimi and nigiri
-making nigiri
-making rolls
-various sushi related prep
-cooking rice
-must speak english
-must work clean
-must have your own knives
