- Chef de Partie - Saute/Garde Mange (Lunch)

- Chef de Partie - Saute (Dinner)

- Chef de Partie - Canapes/Garde Mange (Dinner)

Location & Schedules:

- Location: 11680 Chimney Rock Road, Paso Robles, CA 93446

- Lunch Schedule: Thursday - Monday (7:30 AM - 4:00 PM)

- Dinner Schedule: Wednesday - Sunday (2:00 PM - 10:30 PM or until close)

We're seeking chefs with a wide variety of experiences from high volume to fine dining. A Chef de Partie (CDP) is responsible for all culinary dishes that are prepared in their section. A successful CDP must be very knowledgeable about his or her specialty, as well as culinary functions in general. A person in this role must also be very organized and comfortable working in a high-pressure, fast-paced environment. A CDP must also be able to give orders within their section, as well as reliably carry out orders handed down to them by the Head Chef and Sous Chef. A successful candidate will have experience in scratch kitchens of a fine level such as Michelin or Forbes.

Job Description:

- The Chef de Partie Sauté’s primary role is to oversee the preparation, cooking, and presentation of food in their respective section of the lunch or dinner kitchen operation/menu

- Assist with daily kitchen prep work and station set-up before service and maintaining the highest quality food preparation standards

- Duties associated with this role: preparing, cooking, butchery, and presenting culinary dishes; enforcing strict health and hygiene standards in the kitchen; and troubleshooting any problems that may arise

- Works with Executive Chef, Executive Sous Chef, Sous chef to maintain standards and create new dishes

- Hot appetizers, entrees and other hot dishes for dinner

- Grilling, sautéing foods and dishes for lunch. Ability to consistently cook proteins at proper temperatures in a timely fashion is a must

- Supports the Restaurant with prep & execution of Events

- Supports on prep and execution of any all culinary-related activities as they arise within our out-of-daily job norm

- Picks garnish as needed from the JUSTIN garden and communicates product needs

Qualifications:

- 2+ years fine dining culinary experience

- Serv-Safe Certified

- Culinary Degree preferred but not required

- Demonstrated strong ability to work well under pressure

- Ability to establish direction, obtain commitment and execute appropriate logistical processes

- Exceptional attention to detail, and passion about food and wine

- Must thrive in a fast-paced working environment

- Have a calm and approachable demeanor

Pay Rate: $22.00 - $27.00 per hour. Final compensation will be dependent upon skills, and experience and the position.
