IN A NUTSHELL:

The Bakery Manager/Head Baker is responsible for overseeing all operations and employees at the Wise Sons Bakery, directly managing all bagel bakers and packagers that work overnight. While the schedule for this position can be consistent, schedule adjustments may be necessary to ensure all needs are met for the following shifts:

5:00 pm - 1:00am - Bagel Bakers

7:00 pm - 3:00 am - Packagers

We are working towards adjusting the start times for both positions; therefore, our Bakery Manager will most likely start at 4pm or 5pm and end at 12:30am or 1:00am.

This management role leads the Bakery through ownership of all production including planning for volume and growth, hiring/staffing/training, product inventory and purchasing, wholesale and unit order filling, as well as the overall organization and cleanliness of the space. The logistics and flow of product entering and leaving the space are paramount and the accounting required to support the bakery will be key.

This is a full-time salaried position, with great benefits, joining our Bakery team, and reporting to the Culinary Manager.

THE DETAILS:

Oversee the daily production of all savory and bakery products

Ensure proper food production (heating and cooling) and storage practices (packaging, labeling, FIFO) in accordance with safe food handling procedures

Implement new products and refine recipes with Wise Sons Culinary Team

Utilize Wise Sons operating systems including order guides, prep lists, and schedules to maintain efficient operations including management of pars

Long term production planning for special events, new openings, holidays, wholesale and catering

Maintain weekly ordering and organization of all inventory. Input monthly inventory sheets

Manage the successful production and packing of all internal and external orders

Work closely with the Culinary Manager to access production and packing reports for all orders

Communicate effectively with store managers to make order adjustments as needed and offer support

Manage labor costs of lead packager/bakery teams

Budget labor to fit demand of the internal and external wholesale sales

Hire, train, and manage all employees

Input hours for payroll and tend to HR administration for production employees

Evaluate staff performance including but not limited to termination, write-ups and promotions

Receive deliveries from suppliers; manage supplier and vendor relationships

Collaborate with Culinary Manager to upload invoices for payment in a timely manner

Ensure consistent cleaning and organization of all areas including but not limited to bakery, dry storage, walk in, rear outdoor storage, garbage and office

Ensure equipment is maintained

Maintain a cleaning schedule and coordinate janitorial and dishwashing

WHAT YOU’LL NEED TO BE SUCCESSFUL:

You believe in the Wise Sons product, Mission Statement, and Core Values

Prior baking experience in a high volume kitchen//bakery

Must be able to communicate effectively with managers and staff; Spanish language skills a must

You’re an independent, highly organized, and detail-oriented self-starter

You are solutions-oriented and demonstrate proactive problem-solving skills

You are excited to help create a warm, welcoming work environment and sustain our company culture

2 years experience managing a high output bakery

Tech savvy; Proficient with Google Suite and Microsoft Excel; Bakery Production Systems

Be able to reach, bend, stoop and frequently lift up to 50 pounds

Be able to work in a standing position for long periods of time

Manager Serve-Safe or CA Food Handler Permit is required
