Sous Chef
Ethics, transparency, and predictability are important to us. Especially when it comes to pay and your valuable time. We've provided clarity below, so you need not wonder about our intentions.
Hours:
48 - 52 hours per week (really)
3 - 4 weeks PTO (DOE)
Schedule:
Tues (prep): 11 - 5, 6, 7 (at your own speed)
Wed - Sat (service): 12 - 11p
Sun / Mon (off)
Compensation:
An ideal candidate would be earning $100k+ by the end of 6 months. With an eye on $120k by the end of their 2nd year. With profit sharing and bonuses to follow in year 3.
$80 - 95k to start (DOE)
Raise (of at least) 5% @ 6 months
Raise (of at least) 5% @ 12 months
The Job:
Sharing your time with genuinely considerate people is life-changing. (If you know, you know). Kindness is one of the few qualifications that we require.
You’ll be second-in-command in a 5-person kitchen that serves 12-14 people per evening. We run on respect, timing, and the ability to laugh at our mistakes (quietly, while fixing them). You are not a “rock star,” just a solid professional who takes pride in their craft. Someone who believes that food should be generous, just like the people who make it. While we are seeking people with sushi experience for this Sous position, we welcome others without any sushi experience for our Assistant Chef position.
Ideal Growth Curve:
Menu ownership: after training you would prepare the sushi for our our two window tables (8 - 14 people per night).
Future business partnerships: If we sync really well, partnerships in the current or future businesses is my goal. I believe that the right people, as a team, are much stronger together than alone. Similarly, I see it as an excellent opportunity for me to get stronger with your input, support, and consistency.
Low-stress Environment
It's a relaxed atmosphere. That being said, this all depends on timing, precision, and flow. If you manage your time and movements well, you'll likely love this job, and we'll appreciate you.
Currently, we serve only 12-14 people per evening, over two services.
Sustainability is important. Burnout prevention is taken very seriously.
We are over-staffed, so as to make excellence easy to achieve.
The Team:
You will support the chef-owner, Ken (hello!).
You are supported by an Assistant Chef, a commis chef, a prep chef, and a dishwasher.
On the admin and FOH / service side, you’re supported by a competent, friendly GM with years of Michelin service and management experience, whose reason for being is “how can I help you?”

For better or worse, reputation matters in the culinary world. We are Michelin recommended, with an eye on a star. Our Google and Yelp ratings are 5 and 4.9, respectively, with roughly 100 reviews each. We have personal relationships with chefs and owners at other similarly positioned restaurants. This is an excellent place to hone your ability, build your resume, and create industry connections if you’d ever like to grow elsewhere.

Assistant Chef

Hours:
This position can be part time or full-time. What's most important to us is finding the right candidate and meeting your needs. Below are the shifts that we have available. So please let us know what your dream schedule / hours look like, and we'll see what we can do for you.

Compensation:
$25 - 35 to start (DOE)

An ideal candidate would be earning $75-80k annually by the end of 6 months (@ 40 h/wk).
No sushi experience necessary:
If you want to grow, we want to meet you. Sushi is just one of the many culinary arts, and we believe that a talented chef in a different cuisine would make a wonderful sushi chef.
