Working Hours: Daytime hours + work some weekends and nights as the company needs taking out gigs and helping with catering.

Location: Our commercial kitchen is in Cotati, Ca. We cater all over the Bay Area.

Job Description:

We are seeking a highly skilled, experienced, open minded and motivated Sous Chef to join our prestigious catering and private chef company preparing and overseeing production of all cuisine for our catering and events teams, plus prepare meals for our new business Prep in our commercial kitchen. You will be in charge of preparing all mise en place for our events. The ideal candidate will have a passion for high-quality culinary arts, add creativity, excellent leadership skills, and the ability to help manage, cook and prepare for multiple events each week; while helping to manage our small kitchen team and working with our coordinator and reporting directly to our Executive Chef and Owner. We are a growing business so some weeks are very busy where some weeks can be slower to start. We perform 225 - 275 parties a year. House range form 30 - 40 hours a week more or less if you help take out parties for the company.

Responsibilities:

Assist the Owner and Executive Chef in overseeing all kitchen operations.

Ordering foods.

Prep lists

You will be cooking a prepping for all parties putting together the mise en place for our private chef and catering teams.

Perform some private chef parties - offsite on slower weeks.

Organizing pack outs for gigs and events.

You will be exclusively responsible for packing out and organizing each party and overseeing the private chefs packouts for successful parties.

Prepare and cook high-end dishes for private clients and catering events, as needed.

Manage kitchen staff and ensure efficient workflow

Maintain the highest standards of food quality, presentation, and safety

Must maintain a clean and organized kitchen.

Assist in menu planning, ingredient procurement, and inventory control

Ensure compliance with health and safety regulations

Train and mentor junior kitchen staff

Oversee kitchen setup and breakdown for various events

Qualifications and must have:

Clean DMV, reliable vehicle, willing to drive and shop

Proven experience as Sous Chef, higher or similar role in catering/private chef business.

Proven longevity with similar positions or restaurants.

20 years experience cooking in high end restaurants and/or catering.

Must be able and willing to prepare food daily for gigs; this is mostly the position.

Master craft in French, American and California cuisine.

Basic primal butchery seafood and meats.

Know all your sauces.

Basic baking skills.

Can cook without recipes. Also, follow recipes given by the Executive Chef/Owner.

Be creative when preparing for our chef teams and gigs.

Quick with a sense of urgency.

Team player!

Culinary degree or equivalent professional training

Strong leadership and organizational skills

Excellent communication and team management abilities

Ability to work in a fast-paced environment and handle multiple tasks

Knowledge of food safety standards and regulations

Basic computer skills using Google work space, email, spread sheets.

Understand food cost.
