Tratto, by James Beard Award-Winning Chef Chris Bianco, is an Italian and Southwestern inspired trattoria. Focusing on elevated dishes using the fresh ingredients our region has to offer, we have been named a 5-star restaurant by the Arizona Republic. We are excited to be expanding our team, and are currently looking to hire Line Cooks and Prep Cooks. Tratto is open 5pm-9pm Monday-Saturday, so nighttime availability is a requirement.

Line Cook Position General Responsibilities:

- Prepare and cook menu items to restaurant standards

- Ensure food quality, presentation, and portion control

- Work efficiently in a fast-paced kitchen environment

- Maintain cleanliness and organization in your station

- Follow all food safety and sanitation guidelines

- Communicate with kitchen staff and front-of-house team

- Assist with prep work and stocking as needed

- Uphold restaurant policies and kitchen procedures

Line Cook Expectations:

- Reliable, punctual, and able to work flexible hours

- Strong communication skills and ability to work as a team

- Ability to handle high-volume service

- Must have or be willing to obtain a Food Handler’s Card

- Ability to stand for long periods of time

- Attention to detail and ability to follow recipes precisely

- Positive attitude and willingness to learn

- Takes pride in producing consistent, high-quality food

Line Cook Preferred Experience:

- At least 2 years of cooking experience in a professional kitchen preferred, but not required

- Experience working grill, sauté, fry, or pantry stations

- Familiarity with knife skills, prep work, and proper cooking techniques

- Ability to multitask and stay composed under pressure

- Experience with open flame grills, wood-fired ovens, or cooking Italian cuisine is a plus

- Previous experience in scratch kitchens or high-volume restaurants is a plus

Prep Cook General Responsibilities:

- Prep ingredients for daily service, including chopping, slicing, and measuring

- Follow prep lists and recipes to ensure consistency

- Assist in portioning and stocking items for the line

- Maintain a clean and organized prep area

- Label, store, and rotate ingredients properly to avoid waste

- Follow all food safety and sanitation protocols

- Assist with dishwashing and general kitchen upkeep as needed

- Support chefs and line cooks during peak hours

Prep Cook Expectations:

- Dependable and able to work efficiently in a team setting

- Strong organizational skills and attention to detail

- Ability to work on your feet for extended periods

- Must have or be willing to obtain a Food Handler’s Card

- Ability to perform repetitive tasks

- Willingness to learn new techniques and follow directions

- Punctual, hardworking, and maintains a positive attitude

- Works well under pressure and in a fast-paced environment

Prep Cook Preferred Experience:

- 1+ year of prep experience in a restaurant or food service setting preferred, but not required

- Familiarity with basic knife skills and safe food handling practices

- Experience following prep lists and maintaining inventory

- Knowledge of different ingredients and kitchen equipment

- Previous experience in high-volume or scratch kitchens is a plus
