The Highliner Lodge is a thriving and ambitious fishing lodge, located 90 miles west of Juneau, AK in the remote fishing village of Pelican.

As a rapidly growing business, we are looking for motivated, honest, hardworking and talented individuals to join our team.

The lodge cooks (a team of 3) will work a split shift, typically 4 hours in the early morning and 8 hours in the afternoon/evening. The successful candidate will work nearly every day of the summer from the end of May through early September. If you aren't willing to put in long hours, this is not the place for you.

Our lodge restaurant typically serves breakfast and dinner to 40-48 guests on a given day. The lodge cooks will prepare a high quality buffet-style breakfast for our guests and crew early in the morning before they go fishing, break for several hours after breakfast cleanup, and return to work in the early afternoon to prepare gourmet plated dinners from our rotating "upscale American" menu designed by the lodge owner. Experience cooking seafood is a MUST.

Under our newly revamped food program, lodge cooks will not work under the supervision of a "Head Chef". Instead, you will work as a team under the supervision of our Restaurant Manager, who has a been our dining lead for several seasons. She will handle all of the food ordering and logistics (which is challenging given our location), manage seating times and efficient flow of meal services, and uphold our high standards for production and quality.

The successful candidate for Lodge Cook will work and communicate well with others, be professional in all interactions with guests and crew, and commit to maintaining a drama-free workplace. We value and expect talent in all areas of running a premier lodge, from our fishing efforts to our food production. The most important traits we look for in a candidate are a good attitude and a strong work ethic.

Employment dates:

-May 20 - September 10

-Willing to be flexible on dates (for the right individual)

Job Requirements:

-Must have exceptional culinary skills

-Must take pride in keeping a clean kitchen

-Able to work independently

-Able to clearly communicate with co-workers, manager and owners

-Able to complete tasks on a schedule

-Be outgoing and courteous with customers and staff

-Able to lift 60 pounds and in good physical condition

-Be drug free and a non or very light drinker (strict 3 beers or 2 glasses of wine limit per day)

-Able to live and work in a close environment with co-workers

-Have good organizational skills

-Must be an honest and hard-working team player

Daily Schedule (varies slightly):

-4:00am - 8:00am - Breakfast service and clean-up

-8:00am - 1:00pm - Break

-1:00pm - 6:30pm - Dinner prep

-6:30pm - 9:00pm - Dinner service and clean-up

-You must be able to adjust and adapt to unexpected changes!

Workload:

-We expect the workweek will average 84 hours for the Lodge Cooks. We do not guarantee this. There may be times when you will be asked to work more, or less than 84 hours.

-There are no promises of any days off

-At the owner’s discretion, from time to time, there will be days with a light workload, or days declared “off”

Workers Comp:

-You are covered by Worker's Comp Insurance while at work

-Off-time activities are not covered

Additional Requirements:

-We expect superior performance from our employees, in personal hygiene, professional contact with our customers and relations with other employees.

-The most important factors that we look for when hiring a person is a good attitude and a strong work ethic.

-If you aren't willing to put in long hours, this is not the place for you.

-We expect good manners, good grooming and a professional appearance above reproach.

Compensation:

-$6,000/month salary plus tips

-Significant share of pooled tips (typically $8,000-12,000 for a first-year employee), distributed after successful completion of contract period

-Profit sharing, retirement matching and other long-term opportunities for the exceptional individual after two seasons

-Lodge cooks will earn on average between $30,000-$35,000 (in total) for their first full season. With the majority of your living expenses covered and nowhere to spend money in Pelican, AK this could be a great way for you to get ahead!

Accommodations:

-$600/month (deducted from monthly paycheck)

-Clean, quiet bedrooms with shared bathrooms located on 3rd floor of main lodge

-Room and board includes: 3 meals/day, access to company fitness room, internet, and laundry facilities

Experience:

-Culinary experience: 3 years (required) 5+ years (preferred)

License/Certification:

-Food Handler Certification (Required)
