Head Baker/Manager Position

The role of the Head Baker/Manager is to lead the bakery with success by taking ownership of all things related to baking, maintaining an organized and efficient process for regular bakery operations, and overseeing daily operations of the bakery. The Head Baker/Manager runs their bakery with attention to detail, creating a vibrant culture and a healthy team setting. They execute Willow Creek Bakery’s high standards and hold their team accountable to these standards.

The Head Baker/Manager is a part of the leadership team and is responsible for day to day operations related to baking, managing and training the bakery staff, and deciding what kind of pastry, breads, baked goods, and other menu items will be served.

To be successful in this role, the Head Baker/Manager should have leadership experience, time management/organizational skills, excellent customer service, knowledge of baking and what the industry is doing/serving, and a motivation to keep the bakery clean and presentable.

This position’s compensation includes salary and tips and will be based on experience.

Duties:

Assisting owners with sourcing needed baking equipment/supplies and setting up the bakery to ensure proper flow

Assisting owners with hiring bakery staff

Managing and coordinating the bakery staff

Training & educating the team on the bakery’s process & policies

Monitoring deliveries, incoming orders and stock

Costing out offerings to ensure margins are correct & ensuring profitability by maintaining an accurate record of baking operations

Ensuring ingredients are properly managed & assessing the quality of raw materials before baking

Conducting research to develop original recipes for products and recommending recipes to renew our menu and attract more customers

Helping to prepare, finish off and bake bread

Managing quantities to be baked, ensuring we have stock but also keeping waste to a minimum while discarding any pastry that does not meet our high quality standards

Ensuring the proper storage of baking utensils & that equipment is properly maintained

Setting a positive tone and strong work ethic while leading by example

Assessing what needs accomplished, prioritizing and delegating as needed

Keeping the team motivated and working, checking for quality and thoroughness

Complying with health and safety regulations

Skills needed:

Sense of responsibility

Arrive on-time, ready to work

Open the bakery on-time, early in the morning

Clean kitchen equipment and tools before use

Sense of customer service

Strong communication skills

Team spirit, with a customer-focused attitude

Physical stamina

Flexibility to work around customer demands, including early morning, night, weekend and holiday availability.

Ability to work in a hot, hectic environment, stand, walk, bend, use hands and appliances, and lift up-to 50 pound items

for extended periods.

Organizational skills

Keeping records relating to deliveries, inventory, and production levels.

Hygiene awareness

Cleaning and restocking workstations and ensuring that all equipment is sanitized.

Understanding of food safety practices

At least 2 years of similar experience

Measuring and combining ingredients and using mixers, blenders, heat sources, and other equipment to make baked

goods, such as cookies, bread, cakes, etc

Testing ingredients and finished goods to ensure that each item meets food safety and quality controls.

Basic math and computer skills.

Methodical approach

Attention to detail, especially when performing quality inspections on ingredients and products.

Ability to remain calm and focused in a fast-paced environment

Leadership skills

Willingness to work independently or with other team members to solve problems, fulfill orders, and create amazing

baked goods

Responsiveness

Time and resource management.

Communicating with bakery owners on a regular basis
