The Bear Tooth Grill is a locally owned, upscale casual restaurant located in the heart of the vibrant Spenard neighborhood in Anchorage, Alaska. Inspired by fresh Alaskan seafood and Latin American cuisine, we work with Alaskan farmers and fisheries to source fresh and sustainable produce & seafood.

DUTIES & RESPONSIBILITIES

Daily Operations

- Actively run the line, ensuring timely and quality food service

- Schedule and oversee staff, providing corrective coaching and discipline where needed

- Assist with training new and existing kitchen staff on the preparation and plating of dishes

- Ensure all staff members adhere to food and workplace safety standards and regulations

- Oversee the tracking, recording, and replenishing of inventories

- Communicate relevant information (food supply, quality concerns, etc.) to Front-of-House team

- Work to improve existing systems by providing creative ideas and solutions for observed challenges

- Provide daily communication of events and needs through internal documentation system and email

- Work as a team with fellow managers and set an example of kindness and respect in the workplace

Menu Management and Development

- Assist in the development and implementation of new menu items and monthly specials menu (creating, costing, training staff, etc.)

- Review current recipes and sales figures for areas of inefficiency or quality improvement

- Maintain food cost targets

- Collaborate with Prep Managers regarding needs or concerns affecting the quality, cost, and/or efficiency of current & future menu items

QUALIFICATIONS AND SKILLS

- Previous Sous Chef experience (OR previous supervisory experience and 3+ years working in a high-volume, full-service restaurant)

- ServSafe Certification or willingness to obtain

- Knowledgeable in a variety of cooking techniques and flavors with a true passion for food

- Experience training kitchen staff and implementing kitchen procedures or willingness to learn

- Familiarity with menu costing procedures or willingness to learn

- High level of creativity and reliability

- Strong communication skills, both written and verbal

- An attitude that is motivated, detail-oriented, and committed to quality
